How Humidity Affects Baking

How humidity affects baking: the four things that actually change

Almost every humid-weather baking problem traces back to one of four mechanisms. Once you can name which one you're fighting, the fix is obvious.

Notice that only the first two are genuinely humidity. The fourth is really a temperature problem wearing a humidity costume, and it matters because bakers often make the wrong adjustment for it.

Flour is the ingredient that changes most

Flour is not a dry powder in any absolute sense. Milled wheat flour normally carries somewhere around 11 to 14 percent water by weight, and where it sits in that band depends on the air it has been living in. A bag that has been open in a steamy August kitchen sits at the top. A bag in a heated winter house sits near the bottom. That swing sounds tiny. Run it through a real recipe and it stops sounding tiny.

Worked example: a 500 g loaf at 70 percent hydration

Say you're making a plain white loaf using baker's percentages: 500 g bread flour, 350 g water, which is 70 percent hydration.

  1. Your flour has picked up 2 percentage points of extra moisture from a humid week on the counter. That's 500 g x 0.02 = 10 g of water already in the flour.
  2. Add the recipe's 350 g and the dough is really carrying 360 g of water against 490 g of dry flour solids.
  3. Effective hydration is now about 73 percent, not 70. On a loaf that's the difference between a dough you can shape and a dough that spreads on the bench.

The flip side matters too. In a bone-dry winter kitchen, the same recipe can come out too stiff, because the flour gave up moisture to the room. Same habit, opposite direction: hold back a little flour instead.

Measuring by cups makes humidity worse

Here's the uncomfortable truth. The error humidity introduces is real, but it's usually smaller than the error your measuring cup introduces.

Worked example: 2 1/4 cups of flour, two ways

A layer cake calls for 2 1/4 cups of all-purpose flour.

That's 45 g of extra flour, roughly 16 percent more than the recipe wanted, from technique alone. A humid week might move the same flour by 10 g. Cookies spread more in humid weather

This is the complaint that shows up every July. The same cookie recipe that worked in March goes flat and lacy in summer.

Usually two things are stacking:

Butter is the bigger of the two. Butter melts around 90 to 95°F, and a humid summer kitchen often sits at 78 to 82°F, which means the dough is already halfway to soft before it hits the sheet.

What to do:

  1. Chill the shaped dough for at least 30 minutes, longer if the kitchen is hot. Chilled dough spreads less because the fat has to melt before it can flow.
  2. Add 1 to 2 tablespoons of flour per batch only if chilling alone doesn't fix it, and only after you've weighed.
  3. Work in small batches and keep the rest of the dough in the fridge, not on the counter.
  4. Use a cool sheet pan every time. A hot pan straight out of the oven starts melting the fat before the cookies even go in.

Bread and yeast dough in humid weather

Humidity gives yeast dough one real advantage and one real headache.

The advantage: damp air keeps the dough surface from drying into a skin during the rise. A skinned surface tears instead of stretching, which limits oven spring. In a humid kitchen you barely need to cover the bowl.

The headache: the dough is stickier and slacker, so shaping is harder and the dough sticks to hands, bench and banneton.

The mistake most bakers make is to fix stickiness with flour. Dumping flour onto a sticky dough during shaping dries out the crumb and leaves raw streaks. Use these instead:

Meringue, royal icing and candy: the sugar problems

Sugar attracts water more aggressively than flour does, which is why sugar work is the first thing to fail on a humid day. Finished pieces need protecting from the same air, and keeping fondant decorations dry covers how.

Meringue cookies and pavlova. A dried meringue is basically a sugar sponge sitting in a room full of water vapor. On a damp day it takes longer to dry in the oven, and it starts going tacky within an hour of coming out. Weeping meringue on pie. Those beads of syrup on top of a lemon meringue are undissolved sugar plus moisture. Royal icing. Set time is driven by evaporation, so damp air stretches it out badly. What normally dries in a few hours can still be soft the next morning. Run a fan across the counter, or put finished pieces in front of a dehumidifier. Do not put them in the fridge, which is a humid box. Candy and caramel. Cooked sugar syrups reach a stage by temperature, and that part is unaffected. What is affected is what happens after: hard candy goes sticky, toffee gets soft, and caramel sauce thins. Wrap hard candy individually and store it airtight with the lid on tight. A five-step humid-day routine

Here's the whole thing as a checklist you can run before you start.

  1. Weigh the flour. Not negotiable in damp weather. This removes the biggest variable before humidity gets to add its smaller one.
  2. Hold back 5 to 10 percent of the liquid. Mix, look at the dough or batter, then add the rest if it needs it.
  3. Chill anything with butter in it, and chill it longer than you would in winter.
  4. Bake a little lower and a little longer for anything meant to be crisp or dry. Meringues, biscotti and crackers all benefit.
  5. Seal it up as soon as it cools. Not warm (that makes condensation), not hours later (that's already too late).
