How to Cool a Cake

The cooling window is where most cakes are lost, not the oven. Take it out of the pan too soon and it tears apart in your hands. Leave it in too long and trapped steam condenses against hot metal, glues the crust to the pan, and turns the bottom soggy.

Ten to fifteen minutes in the pan on a wire rack is the sweet spot for most cakes. That is long enough for the starch to firm up and short enough that the pan has not started sweating. Then run a thin knife around the edge, invert onto the rack, and let it finish cooling with air moving underneath.

Two cakes break that rule completely. Angel food and chiffon cool upside down in the pan or they collapse under their own weight. Cheesecake cools slowly, in stages, or it cracks.

How to cool a cake, step by step

  1. Set the pan on a wire rack the second it leaves the oven. Not on the counter. A rack lets air reach the bottom of the pan, which is where the heat is trapped.
  2. Start a timer for 10 minutes. For most layer cakes this is the whole decision.
  3. At 10 minutes, run a thin offset spatula or paring knife around the edge, pressing against the pan wall, not the cake.
  4. Invert onto a rack, peel the parchment off immediately while the cake is still warm and the paper releases cleanly.
  5. Flip it right side up if you want a domed top, or leave it inverted to flatten the dome slightly under its own weight.
  6. Let it cool completely, 1 1/2 to 2 hours for an 8 inch layer in a 70F kitchen.
  7. Check with your palm on the bottom of the cake, not the top. The bottom is the last part to give up its heat, and a cake that feels cool on top can still be 90F underneath.

That last check is the one that saves frostings. A cake that feels cool on the surface after 45 minutes is frequently still warm at the core.

Why a hot cake is structurally fragile

A cake comes out of the oven at roughly 205 to 210F, and at that temperature it has not finished becoming a cake.

Three things are still in progress:

Starch is still setting. During baking, flour starch granules absorb water and swell open, a process called gelatinization. As the cake cools below about 150F, those swollen granules start to firm and lock into a semi-solid gel. Until that happens, the crumb has the structural integrity of wet foam.

The crumb is full of steam under pressure. A hot cake is holding water as vapor inside thousands of cells. That vapor is pushing outward. Cutting or lifting the cake while it is doing that tears the cell walls, and the tears show up as a gummy streak.

Fat is liquid. Butter is fully melted above 95F. Any butter in the crumb is oil at that point, contributing nothing to structure. It only starts firming back up in the 60s.

That is why a warm cake sags off the spatula and a cool one lifts in one piece. Nothing changed except temperature.

Here is what the internal temperature actually does in a typical 8 inch round:

Pan cooling times by cake type

Different shapes hold heat differently, and a few have hard rules attached. Times below assume a 70F kitchen.

Pound cake 15 minutes Dense and heavy. It needs the extra time to firm before it can carry its own weight.
Cheesecake 1 hour in the turned-off oven, door propped open, then 1 to 2 hours on the counter Then at least 6 hours in the fridge, ideally overnight. Never rush it.
Angel food Cools fully inverted in the pan, 1 1/2 to 2 hours Invert the moment it leaves the oven. Do not grease the pan.
Chiffon Cools fully inverted in the pan, 1 1/2 to 2 hours Same rule as angel food, for the same reason.
Genoise or sponge 10 minutes Delicate. Invert onto a parchment-lined rack so the surface does not print rack marks.
Jelly roll or sheet sponge 5 minutes Turn out onto a sugared towel and roll it warm, or it cracks when you roll it later.

The two cakes that cool inverted

Angel food and chiffon are foam cakes. Their entire structure is whipped egg white, stretched thin around air bubbles and set by heat. There is very little flour and, in angel food, no fat at all.

While the cake is hot, those cell walls are soft and pliable. If you set the pan upright on the counter, the cake's own weight compresses the bottom third and it sinks into a dense, rubbery layer. The cake can lose a third of its height in fifteen minutes.

Cooling it upside down puts that weight in tension instead of compression. The cake hangs from the pan walls and the center tube, stretched rather than squashed, and the cell walls set at full height.

How to do it: many angel food pans have small feet on the rim, so you invert the pan straight onto the counter. If yours does not, hang the center tube over the neck of a sturdy bottle. Leave it fully inverted for 1 1/2 to 2 hours until the pan is cool to the touch, then run a thin knife around the sides and the tube to release.

One related rule: never grease an angel food or chiffon pan. The batter needs to grip the ungreased metal to climb during baking and to hold itself up during cooling. A greased pan gives you a short, dense cake, and no amount of correct cooling fixes that.

Why cheesecake cools slowly

Cheesecake is a baked custard, not a cake, and its cracks come from shrinkage. Egg proteins contract as they cool, and the filling shrinks faster than the crust and the pan wall it is clinging to. Something has to give, and it is the surface. That shrinkage is the root of preventing cheesecake cracks, and cooling is the half you control after the bake.

Cooling slowly gives the whole thing time to contract at a similar rate. The staged method:

  1. Turn the oven off and prop the door open a few inches. Leave the cheesecake inside for 1 hour. The oven drops gradually from about 200F rather than dropping 130 degrees in five minutes.
  2. Move it to the counter for 1 to 2 hours, still in the pan, until it is at room temperature.
  3. Run a thin knife around the edge before it goes in the fridge. This releases the sides so the filling can shrink without pulling on the pan wall. This step alone prevents most cracks.
  4. Refrigerate at least 6 hours, ideally overnight, uncovered for the first hour so condensation does not pool on top.

A water bath during baking helps for the same reason, by keeping the outside from setting far ahead of the center.

Releasing a cake that is stuck

If the cake will not come out, heat is your first tool, not force.

Most sticking traces back to pan prep, not cooling. Grease and flour, or butter and parchment on the bottom, changes the odds far more than anything you do afterward. Our guide to how to line a cake pan covers the parchment round and the sling method for sheet pans.

The exception again: angel food and chiffon are supposed to stick. That is the design.

Cooling completely before frosting

Frost a warm cake and you get a mess with a specific mechanism behind it.

Buttercream is an emulsion held together by butter that is solid at room temperature. Butter starts softening around 68F and is fully liquid by 95F. A cake at 90F is well above the point where the butter in the frosting gives up. The frosting thins, slides off the sides, and soaks into the crumb instead of sitting on it.

Cream cheese frosting is worse, because it is softer to begin with. Whipped cream is worst of all, since it slumps above roughly 70F.

So the rule is: the cake has to be at room temperature or below before any frosting touches it. Check the bottom of the layer with your palm. If it has any warmth at all, wait.

Wrapping and chilling layers before you build

Cooled cake layers handle badly. They are soft, they crumb, and they tear when you level them. Chilled layers behave completely differently.

The routine that makes assembly easy:

  1. Cool the layers completely on the rack, 1 1/2 to 2 hours.
  2. Wrap each layer tightly in plastic wrap while it is at room temperature, not warm. Wrapping warm traps steam and makes the surface sticky, wrapping cold pulls condensation onto the crust.
  3. Refrigerate 2 hours, or freeze 30 to 45 minutes.
  4. Level the tops with a serrated knife while cold. A cold crumb cuts clean instead of dragging.
  5. Assemble straight from the fridge.

Wrapped layers keep 2 days in the fridge and up to 3 months in the freezer. Frozen layers are actually easier to frost than fresh ones, and they thaw wrapped so the moisture goes back into the cake instead of evaporating. There is more on holding times in our guide to how to store baked goods.

Humidity and altitude

Humid kitchens cool cakes more slowly. Cooling depends heavily on evaporation, and in humid air less water leaves the surface. On a muggy day, an 8 inch layer that normally takes 90 minutes can take 2 hours or more, and the crust stays tacky. Give it the extra time, keep the cake uncovered while it cools, and run a fan across the counter if you are in a hurry. Do not cover a cake that still feels warm, because the trapped moisture will make the top gummy.

Dry kitchens cool faster but dry the cake out. Under about 30% relative humidity, wrap the layers as soon as they hit room temperature rather than leaving them on the rack for an extra hour.

At altitude, cakes are more fragile coming out of the oven. Lower air pressure means gases expand more during baking, so the cell walls are thinner and weaker. Give the cake 15 to 20 minutes in the pan instead of 10 before you try to release it, and expect faster drying afterward because the air is usually dry too. Worked example: an 8 inch two-layer cake, on the clock

Two 8 inch rounds, baked at 350F (177C, gas mark 4), out of the oven at 2:00 pm. The cake is being served at 7:00.

Time What happens
2:00 Pans come out at about 208F internal. Straight onto wire racks.
2:10 Knife around the edges, invert onto racks, peel the parchment. Centers are around 158F.
2:40 Layers are around 115F. They handle fine but are still too warm to frost.
3:40 Bottoms feel cool to the palm, roughly 75F. Wrap each layer in plastic.
3:45 Into the fridge.
5:45 Layers come out cold and firm. Level the domes with a serrated knife.
5:50 Fill, crumb coat, back in the fridge 20 minutes.
6:15 Final coat.
6:45 Out of the fridge to take the chill off before serving.

The whole thing needs about 5 hours, and 3 1/2 of those are cooling and chilling. If you have less time than that, bake the layers a day ahead. Cooling is the one part of cake making you cannot compress.

Frequently asked questions

How long should a cake cool in the pan?

Ten to fifteen minutes for most layer cakes, 15 to 20 for loaf and pound cakes, and 5 for cupcakes. Sheet cakes usually cool completely in the pan. Angel food and chiffon are the exceptions and cool fully inverted in the pan.

Should I cool a cake in the pan or on a rack?

Both, in that order. Start it in the pan on top of a wire rack so air can reach the pan bottom, then turn it out onto the rack directly after 10 to 15 minutes so steam can escape from underneath.

Why is my cake stuck to the pan?

Usually pan prep rather than cooling, but leaving it in the pan too long is the second cause. Trapped steam condenses against the cooling metal and the sugars re-set, gluing the crust down. Try 2 to 3 minutes of gentle reheat to release it.

Can I put a warm cake in the fridge?

Not straight from the oven. A hot cake in a cold fridge sweats heavily and the condensation makes the crust wet and sticky. Get it to room temperature on a rack first, wrap it, then chill.

How do you cool an angel food cake?

Invert the pan the moment it leaves the oven and leave it fully upside down for 1 1/2 to 2 hours. Use the pan's feet or hang the center tube over a bottle neck. Upright cooling compresses the foam and the cake sinks into a dense layer.

When can I frost a cake after baking?

When the cake is at room temperature all the way through, which is typically 1 1/2 to 2 hours for an 8 inch layer. Check the bottom with your palm, since the base holds heat longest. Butter in frosting starts softening at 68F, so any warmth will thin it.

Does cooling a cake in the fridge make it dry?

Only if it is uncovered. Refrigerated air is dry and pulls moisture out of an exposed crumb, so wrap the layers in plastic first. Wrapped and chilled cake is actually easier to handle and level than cake left on the counter.
