Why Is My Meringue Weeping?

If there's a puddle of clear liquid underneath your meringue, sitting between the meringue and the filling, the underside never got hot enough to cook. Spreading soft meringue onto a cold or cooled filling is the cause, nearly every time. The fix is to spread it onto filling that's still steaming, at 160°F or hotter, so the bottom of the meringue sets on contact.

If the droplets are on top, amber colored and sticky, that's a different problem with a different name. Those are beads, and they come from sugar that never dissolved into the whites plus an oven that ran too hot.

So the honest answer to why is my meringue weeping is: look at where the liquid is first. Underneath is a temperature problem. On top is a sugar problem. They have nothing to do with each other and the fixes don't overlap.

Most weeping pies have two or three of these at once, which is why a single tip never seems to fix it. Work through them in order.

Why is my meringue weeping: the seven real causes

1. The filling was too cool

This is the big one. A soft pie meringue is a foam of raw egg white, and it only sets where heat reaches it. The oven cooks the top and the sides. Nothing cooks the bottom face except the filling it's sitting on.

Put meringue on a filling that has dropped to room temperature and the bottom quarter inch of it stays raw. Raw egg white foam is unstable, and within a couple of hours it collapses back into liquid and pools under the meringue.

Do this instead: have the meringue whipped and ready before the filling comes off the stove. Pour the hot filling into the crust, and spread the meringue on immediately while the surface is still steaming. If your filling has already cooled, put the pie back in a 350°F oven for 10 minutes to reheat it before you top it.

2. The sugar never dissolved

Sugar crystals in a meringue do not just sit there. They pull water out of the surrounding foam and hold it, and then that syrup runs. Undissolved sugar is the source of beading on top, and it makes weeping underneath worse too.

Sugar dissolves into egg white slowly. Dump it in all at once and a lot of it never goes into solution at all.

Do this instead: whip the whites to soft peaks first, then add sugar one tablespoon at a time, waiting about 10 seconds between additions. For three egg whites that's about two minutes of adding. Then run the rub test: pinch a little meringue between finger and thumb. If it feels gritty, keep whipping. Smooth means the sugar is in solution.

Superfine sugar dissolves faster than regular granulated, and it weighs the same at 200 g per cup, so it's a straight swap. You can make it by running granulated sugar in a food processor for 30 seconds.

3. There's no starch in the meringue

Cornstarch is the single most effective anti weeping ingredient there is, and most home recipes leave it out.

A cooked cornstarch paste beaten into the meringue does two jobs. It binds free water so there's less of it available to run, and it holds the foam together as it cools and contracts. This is the classic diner pie technique and it works.

The slurry: whisk 1 tablespoon of cornstarch (8 g) with 1/2 cup of water in a small pan. Cook over medium heat, stirring, until it turns from cloudy to clear and thickens, about 2 minutes. Cool it to lukewarm, then beat it into the meringue a spoonful at a time after the sugar is fully in.

That amount is enough for a meringue made with 3 to 4 egg whites. If you're out of cornstarch, the swaps and what each one costs you are in cornstarch substitute.

4. It was baked too hot, or too long

A hot fast bake browns the tips beautifully and does very little for the base. Worse, high heat overcooks the protein at the surface, which squeezes water out of the foam. Those squeezed out droplets are exactly what beads on top.

Do this instead: 350°F for 12 to 15 minutes gives you color and cooks the meringue through. If beading is your persistent problem, drop to 325°F and go 18 to 22 minutes instead. Meringue is properly cooked, and safe, at 160°F internal. An instant read thermometer pushed sideways into the meringue is the reliable check.

5. The whites were underbeaten or overbeaten

Underbeaten meringue has weak walls between its bubbles and it drains. Overbeaten meringue is worse: the protein has coagulated into clumps, the structure has broken, and it releases water immediately. You can usually see it, because the surface goes from glossy to dull and slightly curdled looking.

Stop at stiff, glossy peaks. Lift the whisk and the peak should stand up and hold, with just the very tip curling. If the meringue looks matte, grainy or separated, it's gone too far and there's no rescue. The full stage by stage guide is in how to whip egg whites.

6. There's fat or yolk in the bowl

Fat destroys egg foam. A trace of yolk, a greasy bowl, or a plastic bowl that has held butter will all stop whites from reaching full volume, and the weak foam they do make drains fast.

Use glass, metal or ceramic, never plastic. Wipe the bowl and the whisk with a paper towel dipped in white vinegar, then dry them. 7. The air is humid

Sugar pulls water out of the air, and a meringue is mostly sugar by weight. On a humid day it will absorb moisture from the room and go sticky and weepy no matter what you did right.

The ratios that matter

Meringue is a ratio, not a recipe. Get the ratio right and everything else is technique.

A large egg white weighs about 30 g, which is the figure the tools on this site use, so three whites is 90 g. That makes the arithmetic easy: a soft pie meringue for a 9 inch pie is 3 whites plus 6 tablespoons of sugar, and a pavlova with the same 3 whites takes 3/4 cup.

Two supporting amounts:

Notice that a soft pie meringue carries less sugar per white than a pavlova does. That's the trade. Less sugar means a softer, more marshmallowy topping, and it also means less of the water binding that sugar provides, which is precisely why pie meringue weeps and pavlova generally doesn't.

A worked example: a no weep meringue for a 9 inch pie

Here's the whole thing in order, with real numbers.

You need: 4 large egg whites (120 g), 1/2 teaspoon cream of tartar, 1/2 cup superfine sugar (100 g), 1 tablespoon cornstarch (8 g), 1/2 cup water.

  1. Make the slurry first. Whisk the cornstarch into the water in a small pan, cook over medium heat stirring constantly until it goes clear and thickens, about 2 minutes. Set it aside to cool to lukewarm.
  2. Get the filling hot and in the crust. Whatever your filling is, it goes into the blind baked shell hot. If you need a refresher on the shell, that's how to blind bake a pie crust.
  3. Whip the whites with the cream of tartar on medium until foamy, then to soft peaks. About 3 minutes with a stand mixer.
  4. Add the sugar one tablespoon at a time, 10 seconds apart. Eight tablespoons, so about 90 seconds of adding. Then whip to stiff glossy peaks, another 2 minutes.
  5. Rub test. Pinch some between your fingers. Gritty means keep going. Smooth means the sugar is dissolved.
  6. Beat in the cooled slurry a spoonful at a time on low. The meringue loosens slightly and goes very glossy. That's correct.
  7. Spread it onto the steaming filling immediately. Start at the edges and work inward, and press the meringue right up against the pastry rim all the way around. That seal is what stops shrinking, and shrinking pulls the meringue away from the filling and opens a channel for liquid.
  8. Swirl the top with the back of a spoon for peaks.
  9. Bake at 350°F for 12 to 15 minutes, until the peaks are golden. The center should read 160°F.
  10. Cool at room temperature, away from drafts, for 2 hours. Not in the refrigerator, not near an open window, not under a fan.

Cut it with a knife dipped in hot water and wiped dry between every slice.

Cooling and storing without ruining it

Cooling is where a perfectly baked meringue still goes wrong.

Cool it slowly and out of drafts. A sudden temperature change makes the foam contract fast, and fast contraction squeezes water out. A cold windowsill or an air conditioning vent will do it. Two hours on the counter is right.

Refrigerate only after it's completely cool, and only if the filling needs it, which a custard or citrus curd filling does. Putting a warm meringue pie into a cold refrigerator guarantees condensation on the surface.

Don't cover it tightly. Plastic wrap pressed onto meringue sticks to it and pulls the surface off. Tent it loosely, or use a cake dome with a little air space.

Eat it the same day. A soft pie meringue is at its best within about 6 hours and is noticeably weepier by day two, refrigerated or not. That's the nature of the thing, not a failure on your part. Does cornstarch really stop meringue from weeping?

Yes, and it's the most effective single change you can make. A tablespoon of cornstarch cooked with half a cup of water into a clear paste, cooled and beaten into the meringue, binds free water and holds the foam through cooling. It's why diner pies sit in a case all day without pooling.

Should I use Swiss meringue instead?

For anything that has to sit, yes. Swiss meringue whisks the whites and sugar together over a bain marie to 160°F before whipping, which dissolves the sugar completely and cooks the whites at the same time. Can I fix a meringue that's already weeping?

Not really, once the liquid has separated. You can blot the surface, pour off what's underneath and serve it quickly, but the foam has already broken and it will keep releasing water. Scrape it off, reheat the filling, and make a fresh meringue with the cornstarch slurry.

Why does my meringue shrink away from the crust?

Because it wasn't anchored. Meringue contracts as it cools, and if it isn't pressed firmly against the pastry rim it pulls inward and leaves a gap. Spread it so it touches the crust all the way around before you swirl the middle, and the shrinkage has nothing to pull away from.

Does humidity really make meringue weep?

Yes. Sugar attracts water out of the air, and meringue is mostly sugar. On a humid day a meringue absorbs moisture from the room, goes sticky on the surface, and weeps sooner. Bake on a drier day if you can, use the cornstarch slurry, and serve the same day.
