What Do Eggs Do in Baking?

Eggs do five jobs at once: their protein sets into structure as it heats, the air you whip into them makes lift, the lecithin in the yolk emulsifies fat and water into one smooth batter, their water adds moisture, and the yolk fat brings richness, color and browning. No other single ingredient covers that much ground, which is why egg substitutes always feel like a compromise.

A US large egg is about 50 g out of the shell, split roughly 30 g white and 18 g yolk. That egg is about 75 percent water, so it hands your batter around 37 g of liquid, 6 g of protein and 5 g of fat. Those three numbers explain almost everything eggs do.

Whites and yolks are close to opposites. Whites are water and protein and they build structure. Yolks are fat and emulsifier and they build tenderness. Knowing which half you actually need is the difference between a fix and a guess.

Job 1: egg protein sets, and that is your structure

Raw egg is liquid. Heat it and the coiled proteins unfold, link to each other, and trap the water in a solid mesh. That transition is coagulation, and it is the reason a custard goes from pourable to sliceable without anything else being added.

The temperatures are narrow and worth knowing:

Sugar and liquid both raise the setting point. That is why a pastry cream can be taken to 185°F without scrambling while a plain beaten egg would seize at 175°F. Sugar physically gets between the proteins and slows them down from linking.

The practical version:

More egg means more structure, and past a point that reads as rubbery. A cake with an extra egg beyond what the formula wants bakes up tight, springy and slightly eggy on the tongue. It is not a disaster, but it is not the cake you meant to make.

Job 2: whipped eggs are the leavening

Egg foam is the oldest chemical-free lift in baking. Whipping unfolds the proteins so they wrap around air bubbles and hold them, and properly whipped whites are roughly 80 percent air by volume.

In the oven, two things happen to that foam at once. The trapped air expands as it warms, and the water in the egg turns to steam and expands far more. Then the protein sets and locks the whole structure in place.

Whole eggs, whites and yolks foam very differently:

Folding is where the lift gets lost. All that whipping work sits in bubbles that a heavy hand destroys in twenty seconds. How to fold ingredients has the technique.

Job 3: the yolk emulsifies, which is why batters stay smooth

Yolk contains lecithin, a natural emulsifier that lets fat and water share a bowl without separating. About one third of a yolk by weight is fat, and the lecithin comes bundled with it.

This is the invisible job. You notice it only when it fails.

The classic failure: you cream butter and sugar beautifully, then add cold eggs straight from the refrigerator, and the mixture goes curdled and grainy. The cold egg chilled the butter back into solid pieces and the emulsion broke. The cake still bakes, but the crumb is coarser and the rise is lower.

The fix costs nothing: bring eggs to about 65 to 70°F first, and add them one at a time so each has a chance to emulsify before the next arrives. Why room temperature ingredients matter covers the whole set, including the fastest way to warm eggs safely.

Job 4: eggs are mostly water

This one gets forgotten, and it is the reason egg substitutions go wrong.

A large egg is about 75 percent water, so 50 g of egg carries roughly 37 g of liquid. Three eggs in a cake are therefore about 111 g of liquid, which is close to half a cup. Remove them without replacing that water and the batter goes stiff and the crumb goes dry.

Read that table twice. The white is almost pure water. All of the fat lives in the yolk. Once you have that, every egg swap in baking makes sense.

Job 5: yolks bring richness, color and browning

The yolk fat coats flour the same way butter does, shortening gluten strands and tenderizing the crumb. Yolk protein and sugars also brown, which is why an egg washed crust goes deep golden and a milk washed crust stays pale.

This is why brioche, challah and pasta doughs use yolks so heavily. They want fat and tenderness inside a dough that still has to hold structure.

Worked example: swapping a whole egg for two yolks

A cookie dough calls for 2 whole eggs and you want a chewier result.

That is a real shift, not a rounding error. Less water means less steam, less spread and a denser, chewier crumb. More fat means a richer flavor and a softer bite on day two. Do not go further than one extra yolk per two eggs, or the dough turns greasy and refuses to hold a shape.

Egg sizes, and why weighing wins

Recipes are written for US large eggs. Everything else is a silent variable.

A four egg cake made with jumbo eggs picks up 52 g of extra liquid, which is more than 3 tablespoons. That is enough to slacken a batter, drop the rise and add a distinctly eggy note. Egg sizes are set by the USDA egg grading standards, which grade by weight per dozen in the shell, so the same carton label means the same thing everywhere in the US.

Worked example: your recipe wants large, your carton is extra large

The recipe calls for 3 large eggs, which is 3 x 50 = 150 g. You have extra large.

  1. Three extra large eggs would be 3 x 56 = 168 g. That is 18 g over, a 12 percent overshoot on the egg line.
  2. Beat three extra large eggs together until the yolks and whites are uniform.
  3. Weigh out 150 g. The remaining 18 g is about a tablespoon, which is exactly the right amount for an egg wash.

Egg wash: four versions, four finishes

An egg wash is a separate job from the eggs inside the dough, and the version you brush on decides the look.

Two rules. Brush thin, because pooled wash sets into a rubbery skin and glues layers shut. And keep it off the cut edges of puff pastry or laminated dough, since a sealed edge cannot rise.

When eggs go wrong: the four common failures

Eggy smell and taste. Usually too many eggs relative to sugar and fat, or underbaking so the protein never fully sets. A little acid, like a teaspoon of lemon juice or buttermilk, mutes the sulfur note.

Rubbery or tough crumb. Too much egg protein, or too hot an oven. Egg white tightens hard above about 175°F and squeezes water out, which is the mechanism behind a weeping custard and a tough angel food cake.

Curdled creamed butter. Cold eggs. Warm them and add one at a time.

Green ring or grayish crumb. Overcooked yolk, where iron and sulfur react. Harmless, and a sign to pull the bake earlier or lower the temperature.

What happens when you take eggs out

Every substitute covers one or two of the five jobs, never all five. That is the honest framing.

Frequently asked questions

What happens if you add an extra egg to a cake?

You get more structure, more moisture and a springier, slightly rubbery crumb with a faint eggy taste. One extra egg in a large cake is usually survivable and reads as denser rather than ruined. Two extra makes the cake tight and bouncy, closer to a bread pudding than a cake. If you want a moister cake, add an extra yolk instead of an extra whole egg, since that brings fat without the extra protein.

How much does a large egg weigh?

About 50 g out of the shell, split roughly 30 g white and 18 g yolk. In the shell it runs closer to 57 g. Extra large is about 56 g out of shell and medium about 44 g, which is why weighing beats counting once you are multiplying a recipe by three or four.

Do eggs have to be at room temperature for baking?

For anything creamed, yes. Cold eggs seize the butter you just creamed and break the emulsion, which costs you crumb quality and rise. For recipes with melted butter or oil, cold eggs are fine. Whites whip to greater volume at room temperature too, so warm them for meringues and sponges.

Can I use only egg whites in a cake?

You can, and the result will be paler, leaner, drier and springier. White cake is built exactly this way on purpose. If you are converting a whole-egg recipe, use about 2 whites for every whole egg by weight, roughly 60 g of white per 50 g egg, and add a tablespoon of oil per egg to replace the missing yolk fat.

Why do recipes say to add eggs one at a time?

So each egg can emulsify into the fat before the next one arrives. Dumping three eggs into creamed butter at once floods the mixture with more water than the fat can take up, and it breaks into a curdled mess. One at a time, beating 20 to 30 seconds between each, keeps the emulsion intact and the crumb fine.

Are eggs a leavening agent?

Yes, when you whip them. Air beaten into whites or warmed whole eggs is real leavening, and it carries angel food, souffle, genoise and chiffon with no baking powder at all. Unwhipped eggs stirred into a batter contribute steam in the oven but very little lift on their own.

What does egg yolk do in cookies?

It adds fat and lecithin without much water, which makes cookies chewier, richer and softer the next day. An extra yolk is one of the most reliable ways to push a cookie from crisp toward chewy. Go past one extra yolk per two whole eggs and the dough turns greasy and spreads.

Can I substitute egg white for whole egg?

Not one for one. A whole egg is 50 g with 5 g of fat, while an egg white is 30 g with almost none. Use 2 whites per whole egg to match the weight, then add a teaspoon of oil per egg to make up for the missing yolk fat, or you will get a dry, lean crumb.
