Why Do My Macarons Have No Feet?
Why do my macarons have no feet? In almost every case it's one of three things: the oven is running cooler than the dial says, the batter got over-folded and is too loose to lift, or the shells never formed a proper skin before they went in.
Feet are not decoration, they're evidence. They form because the top of the shell sets first and the steam underneath has to escape sideways, pushing a ruffled collar out at the base. No feet means the steam either never built fast enough or found an easier way out.

How macaron feet actually form
Understanding this makes the fixes obvious, so it's worth ninety seconds.
A piped shell sits out for a while. During that rest, the surface dries into a thin skin, the way a puddle of paint skins over. That skin is a lid.
Then the tray goes into the oven. Two things happen at once. The water in the batter starts turning to steam, and the air bubbles trapped in the meringue expand with the heat. The batter wants to rise.
But the lid is set, so it can't rise straight up. The only route out is at the base, where the batter is still soft and touching the pan. The rising batter pushes down and out, and what squeezes out around the bottom edge is the foot.
So a foot needs all four of these at once:
- A skin firm enough to act as a lid
- Enough trapped air in the meringue to expand
- Enough heat, fast enough, to make steam quickly
- A batter thick enough to hold its shape while all of that happens

That order is deliberate. In our experience troubleshooting failed batches, the oven is the first thing to test and the last thing anyone thinks to check.
Cause 1: your oven is colder than it says
Home oven dials and home oven cavities disagree more often than not, and the gap can be a full 25 degrees or more in either direction. A cake tolerates that. A macaron does not, because the whole trick depends on generating steam faster than the shell can vent it.
The fix costs almost nothing: put a standalone oven thermometer on the middle rack, preheat for a full 20 minutes past the beep, and read it.

The fan column matters. A convection oven moves air, so it transfers heat faster and the standard adjustment is 25 degrees Fahrenheit lower, one gas mark down. Two more oven-side causes worth ruling out:

- Rack position. Too low and the bottom heat sets the base before the shell can lift, which gives you a spread instead of a foot. Middle rack is the default, and which oven rack to use explains why.
Cause 2: the batter was folded too far
Macaronage is the step where you deflate the meringue on purpose, just enough for the batter to smooth out but not so much that it flows.
The target is often described as lava, or a ribbon that falls off the spatula and sinks back into the surface in about 10 seconds. Here's the honest version of that test:

Once you're past correct, there is no way back. You can't re-whip a folded macaron batter, so the safe move is to check the ribbon every three or four folds near the end rather than counting folds. One quiet cause of over-folding: adding liquid food coloring. Extra water thins the batter, and you compensate by folding less, but people usually fold the same and end up past the line. Use gel or powder instead, and the reasoning is in our comparison of gel vs liquid food coloring.
Cause 3: the shells never skinned
Touch a rested shell lightly with a dry fingertip. It should feel dull and dry, and your finger should come away clean. If anything sticks, it's not ready.
Resting time is not a fixed number, because it depends on the moisture in your kitchen:

The low oven trick for humid days. Set your oven as low as it goes, put the tray in with the door propped open with a wooden spoon, and give it 8 to 12 minutes. You're drying the surface, not baking. Check with the fingertip test, then bake as normal.
You can also run a fan in the room pointed away from the tray, or run a dehumidifier. What you cannot do is skip the rest and hope. Without a skin, the steam escapes straight up through the top and you get a cracked, footless shell.
The opposite problem exists too and it's rarer. Rest too long, especially in very dry air, and the skin gets thick and rigid. The shell then can't expand at all, so the feet stay small or the top cracks along a fault line. If you've rested for two hours because life got in the way, expect a compromised batch.
Cause 4: the meringue was never stiff enough
This is the one that hides, because the batter looks fine until it's on the tray.
Whip to genuinely stiff peaks. The peak stands straight up with only a small hook at the tip, the foam is dense and glossy, and it cuts cleanly rather than folding over. Anything softer and there simply isn't enough trapped air to expand into a foot. Things that quietly wreck the foam:
- Any trace of fat. A speck of yolk, a greasy bowl, a plastic bowl that held butter last week. Wipe the bowl with vinegar or lemon juice first, and separate eggs carefully using this method.
- Sugar added too early. Sugar dissolved into whites before they've built structure slows the foam down badly. Wait for the frothy stage.
- No acid stabilizer. An eighth of a teaspoon of cream of tartar per white widens the window between perfect and over-whipped from seconds to closer to a minute. - Letting the batter sit. If you pipe one tray, bake it, and leave the second bowl of batter on the counter for 25 minutes, that second batch will have deflated. Pipe everything at once.
Cause 5: your pans and mats are insulating the base
Feet need bottom heat. Stack too many layers under the shells and the base never gets warm enough to drive steam.

Weigh everything, because volume ruins this bake
Macarons are the least forgiving thing in the pantry when it comes to measurement. The classic ratio is close to equal weights of almond flour, powdered sugar, egg white and granulated sugar, so a small error in one of them shifts the whole batter.

Worked example: what a measuring cup costs you
You're working from a formula that wants 96 g almond flour and 100 g sifted powdered sugar, or 196 g of dry mix total.
You don't own a scale, so you scoop. One cup of almond flour scooped straight from the bag is 110 g. One cup of powdered sugar, unsifted, is 120 g. Total: 230 g.
That's 34 g more dry material than the formula asked for, roughly 17 percent over, on a batch built around 100 g of egg whites.
What that does: too much dry mix makes the batter stiff, so you fold longer to bring it down to ribbon stage. Folding longer knocks the air out of the meringue. Now you have a batter that is simultaneously heavy and deflated, which is the exact combination that produces no feet. The measurement error and the folding error look like two problems, and they're one.

French, Swiss and Italian meringue: which one is failing you
The three methods fail differently, so it helps to know which one you're using.
French meringue whips raw whites with granulated sugar. Least stable, most sensitive to humidity, and by far the most common source of footless macarons. If you're a beginner losing batches, this is usually why. The foam is fine when it's fresh and deflates quickly under folding.
Swiss meringue warms the whites and sugar together over a water bath until the sugar dissolves, then whips. More stable, more forgiving during macaronage, and it tolerates a slightly longer fold. Feet tend to be shorter but more consistent.
Italian meringue pours a hot sugar syrup into whipping whites. The most stable of the three and the one that survives humidity best, which is why professional kitchens use it. It's also the fussiest to set up. If you live somewhere humid and nothing else has worked, this is the switch worth making.
None of the three is "correct." They're different insurance policies against different failure modes.
Feet that form and then collapse
Different problem, different fix. If you watched feet rise in the oven and then found them flat or shrunken afterward, the shell was underbaked. The interior structure hadn't set, so when the steam pressure dropped, the shell settled back onto its own foot.
Signs of an underbaked shell:
- The top slides sideways when you nudge it while still warm
- It sticks to the parchment instead of lifting cleanly once cooled
- The inside is hollow with a thin roof
The fix is more time, not more heat. Add two to three minutes and let the tray cool completely before you try to lift a single shell. Warm macarons tear.

Why do my macarons have feet on one side only?
That's uneven heat, not technique. One side of your oven is running hotter, or the tray is warped and isn't sitting flat on the rack. Rotate the tray halfway through and check your oven for hot spots, and if a sheet pan rocks on the counter, retire it from macaron duty.
Do macarons really need to rest before baking?

It helps a little and it isn't the thing standing between you and feet. Letting separated whites sit covered in the fridge for a day or two evaporates a small amount of water and relaxes the proteins, which makes the foam slightly easier to whip.
