How to Tell When Cookies Are Done
Pull cookies when the edges are set and lightly browned, the centers look puffed and have just lost their wet shine, and the surface no longer wobbles when you nudge the pan. They will look underdone in the middle. That is correct. Cookies finish baking on the hot sheet for another 3 to 5 minutes after they leave the oven.
A thermometer will not help you here. Cookies are too thin for a probe to sit in the center without touching the pan, which is why our own baking time tool lists cookies as "not measurable" while bread gets a clean 190 to 210°F target. For cookies the visual cues are the test.
The other half of the answer is that your recipe's stated time is an estimate for someone else's oven, pan and scoop size. Learn the signs and you can bake any recipe correctly on the first tray.

A note on numbers. This page gives you oven temperatures, bake times, pan sizes and visual cues, not dollar figures. Ingredients, pans and thermometers are priced by your retailer and your region, and we do not set any of it. Every number here is one you set on a dial or a timer, not one you pay.
How to tell when cookies are done: the five signs, in order
Check them in this order, because the earlier ones happen first in the oven.
1. The edges are set and hold a shape. Run a spatula lightly against the edge. If it slides under cleanly and the edge holds, the structure has set. If it smears, give it another minute.
2. The surface has lost its shine. Raw dough reflects light in a wet, glossy way. As the surface dries and sets, it goes matte. A center that is still glossy is still wet dough underneath.
3. The color has broken at the edge. You want a ring of light golden brown roughly 1/4 to 1/2 inch wide around the outside, blending into paler dough in the middle. Even color all the way across means you went a minute or two long.
4. The center is puffed, not sunken. Cookies rise in the middle, then settle as the structure sets. Pull them while the middle is still slightly domed and it settles into a soft, chewy center as it cools.
5. The pan nudge shows no ripple. Push the sheet gently. If the centers ripple like liquid, they are not there yet. If they jiggle as a single set piece, they are done.
Three of those five signs together is enough. All five and you have probably waited too long.
The carryover rule nobody tells beginners
A baking sheet at 375°F is a large piece of hot metal, and it does not stop working when you take it out of the oven. A cookie sitting on it keeps cooking.
Some real numbers to hold onto:
- A standard half sheet pan leaving a 375°F oven is still above 250°F two minutes later
- A 45 g cookie on that pan continues to set for a further 3 to 5 minutes
- On a dark pan, which holds and radiates more heat, that window runs closer to 5 to 6 minutes
This is why "bake until they look done" produces hard cookies. If they look finished in the oven, they will be overbaked by the time they are cool.
Two ways to use carryover deliberately:
Leave them on the sheet for 5 minutes, then move them. This is the standard, and it gives a set edge with a soft center.
Move them to a rack after 2 minutes. Do this if you want them softer still, or if the cookies looked closer to done than you wanted. Pulling them off the hot metal stops the carryover early.
If you routinely take them off immediately, expect a few to break apart on the spatula. The structure is not fully set until the sugars cool and firm.
Doneness cues by cookie type
Different cookies show doneness in different places, and this is where most bad advice comes from. Applying chocolate chip rules to shortbread will give you pale, raw shortbread.

Two special cases worth naming. Dark doughs like chocolate or molasses hide browning completely, so use the crack test: look inside a surface crack, and if it still looks wet and shiny, it needs another minute. Very pale doughs like sugar cookies and shortbread are done well before any real color appears, and waiting for gold overbakes them.
Why your recipe's time is wrong for your kitchen
Recipe times assume a light aluminum sheet, a correctly calibrated oven, and a scoop size the writer never told you. Change any of those and the time moves.

The oven calibration one is worth taking seriously. Home ovens routinely run 25 to 50°F away from their dial, and there is no way to know without a separate thermometer sitting on the rack. If your cookies always take longer than the recipe says, that is your answer.

Worked example: one tray, minute by minute
Standard chocolate chip dough, 45 g scoops, light aluminum sheet, oven verified at 375°F with a separate thermometer, dough straight from the fridge. The recipe says 10 minutes.
Minute 6. Cookies have spread to about 2 3/4 inches and puffed. Surface is glossy everywhere. Nowhere near done.
Minute 8. Spread has stopped at roughly 3 inches. The outer 1/4 inch is set and just starting to color. The center is still shiny. Rotate the tray now if your oven has a hot side.
Minute 9. The gold ring is clear at the edge. The center has gone from glossy to matte in the middle but the ring between center and edge still looks slightly wet. One more minute.
Minute 10. Edges browned, center matte and domed, no ripple on the nudge. Pull it.
Minute 10 plus 4 on the pan. The dome settles. The center goes from looking raw to looking soft and set. Move to a rack.
Total. Ten minutes in the oven, four on the pan. If you had waited for the center to look done in the oven, you would have pulled at minute 12 and had a cookie that turns hard by the time it cools.

Underbaked, or just cooling?
There is a real difference between a cookie that needs more oven time and one that just needs to finish cooling, and people throw out good batches by confusing them.
Genuinely underbaked: the bottom is pale with no color at all, the center is wet and sticky at room temperature, and the cookie collapses or tears when you lift it after 5 minutes on the pan. Doughy at room temperature, not just warm-soft.
Just warm: the bottom is golden, the edges are firm, and the center feels soft because the sugar and fat are still liquid at 140°F. Give it 15 minutes at room temperature and it firms up completely.
The bottom is the tell. Lift one with a spatula and look. A pale white underside means it needed longer or the oven was too cool. An evenly golden underside means it is fine.
You can rescue a genuinely underbaked batch. Put them back on the sheet and give them 3 to 4 minutes at 350°F. It works because cookies are thin enough to reheat all the way through, which is not true for a cake.
Bar cookies and brownies play by different rules
Bars are thick enough that the surface tells you almost nothing, so switch tests.
Use a skewer or toothpick inserted about an inch in from the edge, not dead center. For a fudgy brownie you want thick, sticky crumbs on the skewer. For a cakey brownie or a blondie you want a few moist crumbs and no wet batter. A completely clean skewer means you overbaked it.

Frequently asked questions
Should cookies be soft when they come out of the oven?
Yes, and this is the single most useful thing to know. The centers should look slightly underdone and feel soft when you pull the tray. They set as the sugars cool and firm, plus another 3 to 5 minutes of carryover cooking on the hot pan. A cookie that feels done in the oven will be dry when it cools.
Can I use a thermometer to check cookies?
Not usefully. A cookie is too thin for a probe to sit in the center without contacting the pan, which reads the metal temperature instead. Thick bar cookies are the exception, though even there a skewer test is more informative than a number.
Why are my cookies burned on the bottom but raw on top?
Almost always the pan. Dark, thin or nonstick sheets absorb radiant heat and conduct it straight into the cookie base while the top cooks by slower convection. Switch to a light heavy-gauge aluminum sheet, move the rack to the middle position, and drop the oven 25°F if a dark pan is all you have.
How do I know when dark chocolate or molasses cookies are done?
Use the cracks. Browning is invisible in dark dough, so look inside a surface crack: shiny and wet means more time, dull and dry means done. Combine that with the pan nudge test and the set edge, since color will not help you at all.
How long do cookies need to cool before moving them?
Five minutes on the sheet, then a wire rack. Less than two minutes and they tear on the spatula because the structure is not set. More than about eight minutes on a hot pan and they keep cooking past the texture you wanted. Move them at two minutes if you want them softer.
Can I bake two trays of cookies at once?
You can, though both trays will run 1 to 3 minutes longer and brown unevenly. Use the upper-middle and lower-middle racks, then swap and rotate them halfway through. In a convection oven this is much less of a problem because the fan evens out the heat.
Why did my cookies keep spreading after I took them out?
They came out before the structure set, which usually means the dough was too warm going in or the oven was running cool. Cold portions and a verified oven temperature fix it. If the spread happened in the oven rather than after, our flat cookie guide covers the eight usual causes.
Does pulling cookies early actually make them chewier?
