Why Did My Cake Bake Unevenly?

An uneven cake almost always comes from one of three things: oven hot spots, an oven or rack that is not level, or batter divided between pans by eye instead of by weight. All three are fixable in an afternoon and none of them are about your technique with the batter.

The shape of the problem tells you which one it is. A dome in the middle is a temperature issue. A wedge that is taller on one side is a level issue. Two layers of different heights is a splitting issue.

Why did my cake bake unevenly? Match the shape to the cause

Look at the cake, not the recipe. Each of these patterns has a single dominant cause.

Cause 1: hot spots, and how to map them in 6 minutes

Every home oven has hot spots. The heating element is in one place, the fan is in another, and the racks block airflow. Manufacturers do not promise even heat, and cheap ovens vary the most.

The bread test

This takes six minutes and tells you more about your oven than the manual does.

  1. Heat the oven to 350°F and give it a full 25 to 30 minutes, not just until the beep. The walls and racks need to reach temperature too.
  2. Cover the middle rack with plain white sandwich bread, edge to edge, in a single layer. Six to eight slices does it.
  3. Bake for 4 to 6 minutes, watching through the door.
  4. Pull the rack out and photograph it from above.

The browning pattern is your oven's heat map. Most ovens show a distinctly darker zone at the back, and gas ovens often run hotter at the left or right depending on where the burner sits. Save the photo. You'll use it every time you load a tray.

What to do with the map

Rotate once, at the two thirds mark. For a cake that bakes 35 minutes, rotate at minute 23. Turning the pan 180 degrees averages the hot spot across both halves.

Do not rotate early. A cake that has not set yet can fall when the oven door opens and cold air rushes in. Before roughly the halfway point, the structure is still liquid enough to collapse. Between two thirds and three quarters of the way through is the safe window.

Open the door for under 5 seconds. A home oven can lose 25 to 50°F in 30 seconds with the door open, and it takes several minutes to recover. Rotate fast and shut it.

Bake one thing at a time when it matters. Two racks in use means the top pan shields the bottom pan from the upper element and the bottom pan blocks rising heat from the lower one. Verify the temperature while you are at it

Home ovens routinely run 25 to 50°F away from the dial, and the display cannot tell you. Put a separate oven thermometer on the rack and leave it there permanently.

An oven running hot is the number one cause of a domed, cracked cake. It sets the outer inch of batter into a firm wall while the center is still liquid and still rising, so the only place left for the middle to go is up.

Cause 2: your oven is not actually level

This one is invisible until you look for it, and it explains the lopsided cakes that survive every other fix.

Batter is a liquid. It finds its own level in the pan regardless of what the pan is sitting on. So if the rack tilts, the pan tilts with it, and the batter surface stays horizontal while the pan floor does not. One side of the cake bakes deeper than the other.

The numbers

Take an 8 inch round holding 4 cups of batter, which sits about 1.15 inches deep when the pan is level.

Now tip the rack so one edge of the pan sits 1/8 inch lower than the other. That is a tilt of less than 1 degree, small enough that you would never see it by eye. The deep side is now about 1.21 inches and the shallow side about 1.09 inches.

That's an 11 percent depth difference across one layer. The shallow side sets several minutes before the deep side, and you get a wedge with a dry thin edge and a slightly underdone thick edge.

How to check and fix it

Put a bubble level or a phone level app directly on the rack, front to back and side to side. Do it on the middle rack, which is the one you use.

If the rack is bent, replace it. A rack that has been used to slide out heavy roasting pans for years develops a sag in the middle, and that sag is enough to tilt a cake pan.

If the oven itself is off, adjust the feet. Nearly every freestanding range has threaded leveling feet you can turn by hand or with a wrench. Built-in wall ovens usually sit in a cabinet that can be shimmed.

If the floor is the problem, which is common in older kitchens, shim under the front feet with washers until the level reads true. Check both directions.

A quick sanity check without any tools: set a shallow pan of water on the middle rack and look at where it pools. Water does not lie.

Cause 3: you split the batter by eye

Two layers from one bowl should be identical. They usually are not, because dividing batter by looking at it is much harder than it seems.

Weigh each pan. Set the empty pan on the scale, tare it, pour, and stop at the target. Getting both pans to within 10 g of each other takes about 20 seconds.

Worked example: two 8 inch layers

Step 1. Weigh the whole batch. Set the mixing bowl on a scale before you start, note the empty weight, and weigh again when the batter is done. Say the batter comes to 1,880 g.

Step 2. Divide. 1,880 ÷ 2 = 940 g per pan.

Step 3. Sanity check the depth. Cake batter runs roughly 235 g per cup, so 940 g is about 4 cups. In an 8 inch round with 50.3 square inches of floor: 4 x 14.44 ÷ 50.3 = 1.15 inches deep. That is right where a 2 inch pan wants to be, a little under two thirds full.

Step 4. See what eyeballing costs. A typical by-eye split lands closer to 1,010 g and 870 g, a 140 g gap. That works out to 1.23 inches against 1.06 inches, a 16 percent difference in depth.

Step 5. Translate that into time. Sixteen percent more depth is roughly 4 to 6 extra minutes at 350°F. Pull both pans at the same moment and one layer is dry while the other is slightly wet in the middle. Pull them separately and they are different heights, which shows up the second you stack them.

One more splitting habit worth adopting: stir the batter gently before you pour the second pan. Leavening and heavier solids settle in the few minutes it takes to fill the first one.

Cause 4: the dome, and how to flatten it

A domed center is not a mistake exactly, it is physics. The batter touching the hot pan wall sets first. The center, insulated by the batter around it, keeps rising after the edges have locked in place.

The bigger the temperature gap between edge and center, the bigger the dome.

Four ways to reduce it, in order of effect

1. Lower the oven and bake longer. Going from 350°F to 325°F and adding 8 to 12 minutes is the single most effective fix. It narrows the gap between the outside and the inside of the pan, so the whole cake rises at closer to the same rate.

2. Use damp pan strips. Wet a strip of old towel, wring it out, wrap it around the outside of the pan and pin it. The evaporating water holds the pan wall near 212°F instead of letting it climb, so the edge sets later. Commercial versions do the same job and are easier to reuse. Expect this to cut the dome by half or more and to add 5 to 10 minutes to the bake.

3. Switch to light aluminum. Dark and nonstick pans absorb radiant heat and set the edges harder and faster. If a dark pan is what you own, drop the oven 25°F.

4. Don't overfill. Two thirds full is the target. A pan filled three quarters or higher has further to climb and domes more, and it also risks batter over the rim.

What not to bother with: tapping the pan repeatedly, adding extra leavening, or "spreading the batter up the sides." The first two make things worse and the third does nothing measurable once the batter melts.

If you still have a dome, level it

Let the cake cool completely, then slice the dome off with a long serrated knife using the pan rim as a guide, or a cake leveler if you have one. Cutting a warm cake tears it, so wait. How to cool a cake has the timing.

Cause 5: the pan, the crowding, and the fan

Three mechanical causes that are easy to miss.

Warped pan bases. A thin pan that has been through a lot of thermal cycling develops a bowed base. The batter pools where the base is lowest, so the cake is thicker there before it ever hits heat. Set the pan on a flat counter and press each corner. If it rocks, it will bake unevenly forever.

Pans touching. Two pans on one rack need at least 2 inches between them and 2 inches from the oven walls. Where they touch, or where a pan sits against the wall, air can't circulate and that edge bakes slower and paler. If your oven is too narrow for two 9 inch pans with clearance, bake them one at a time.

Mismatched pans in the same bake. A light aluminum pan and a dark nonstick pan side by side will not produce matching layers no matter what else you do. Use two of the same pan.

Convection fans. A fan makes most bakes more even, but the airflow is stronger near the fan, and a tall cake can catch a directional blast that browns one side. Drop the temperature 25°F when using convection, and if the cake browns unevenly anyway, switch to conventional for cakes and save convection for cookies and roasting. Cause 6: the batter went into the pan uneven

Sometimes the oven is fine and the batter simply wasn't flat when it went in.

Thick batters do not self-level. A stiff pound cake or carrot cake batter holds whatever shape you scrape it into. Spread it to the edges with an offset spatula, then tap the pan firmly on the counter three times. That flattens the surface and pops the largest air pockets. Do not tap ten times, since that knocks out the fine bubbles you want.

Unevenly mixed leavening rises unevenly. Whisk the baking powder and baking soda through the dry ingredients for a full 30 seconds before the flour ever meets liquid. A clump of baking powder in one quadrant produces a visible bulge there. The ratios are covered in baking soda vs baking powder.

Overmixed batter behaves badly too. Extra gluten makes a batter elastic, which encourages peaking and tunneling rather than a flat rise. Stop at the last dry streak. What overmixing does to batter has the stop signals.

Cold ingredients curdle the emulsion. A broken batter has fat pooled in patches, and those patches bake differently from the rest. Bring butter, eggs and dairy to about 65 to 68°F first. Why room temperature ingredients matter explains the mechanism.

Frequently asked questions

Why is one side of my cake higher than the other?

Almost certainly a tilt rather than a heat problem. Batter levels itself, so if the pan is not sitting flat, one side ends up deeper and bakes into a wedge. Put a bubble level on the middle rack in both directions, check the rack for sag, and adjust the oven's feet until it reads true.

How do I stop my cake from doming in the middle?

Lower the oven from 350°F to 325°F and add 8 to 12 minutes, which is the biggest single lever. Wrapping damp pan strips around the outside of the pan keeps the wall near 212°F so the edges set later, cutting the dome by half or more. Filling the pan only two thirds full helps as well.

When should I rotate a cake in the oven?

At about the two thirds mark, and only once. For a 35 minute bake that means minute 23. Rotating earlier risks a collapse, because the structure has not set and opening the door drops the oven 25 to 50°F. Keep the door open for under 5 seconds.

Do oven hot spots really make that much difference?

Yes. A gap of 25°F between the front and the back of an oven is common and it is enough to give you a browned edge on one side and a pale one on the other. Map yours with a single layer of white bread at 350°F for 4 to 6 minutes and photograph the browning pattern.

Why did my two cake layers come out different heights?

Because the batter was divided by eye. A by-eye split commonly lands 130 to 150 g apart on a two layer batch, which is a 15 percent depth difference and 4 to 6 minutes of bake time. Tare each empty pan on a scale and pour to within 10 g of the same number.

Can I fix uneven cake layers after baking?

Yes, easily. Cool the layers completely, then trim the tops flat with a long serrated knife and stack them cut side down. Frosting hides the rest, and splitting a wedge shaped layer in half horizontally and reversing one piece cancels the slope entirely.

Does the oven rack position affect how evenly a cake bakes?

It does. The middle rack keeps the pan away from both the bottom element and the top one, which is what you want for a cake. Baking on two racks at once shields each pan from part of the heat, so if you must, swap and rotate the pans at the two thirds mark.

Why is my cake browner on the bottom than the top?

That points at the lower element, a dark pan, or a rack set too low. Move to the middle rack, switch to light aluminum, and if the browning persists, place a second empty sheet pan on the rack below to shield the base. Do not fix it by lowering the temperature alone, since that just extends the bake and dries the cake.
