Why Is My Buttercream Grainy?

Undissolved sugar, nine times out of ten. Either the powdered sugar never got enough liquid and time to dissolve, or, in a meringue buttercream, the granulated sugar never reached the temperature that melts it into the egg whites. Both are fixable in about 10 minutes without starting over.

The other cause is butter that was too cold, which gives you tiny fat pellets rather than sugar grit. It feels similar in the bowl and needs the opposite fix, so the first thing to do is work out which one you have.

Rub a little between your thumb and finger. Sandy grit that dissolves on your tongue is sugar. Small waxy specks that smear rather than dissolve are cold butter. That test takes five seconds and saves you from adding liquid to a problem that needs warmth.

Why is my buttercream grainy: the 30 second diagnosis

Four textures, four different causes. Find yours before you touch the mixer.

The two middle rows get mistaken for each other constantly. Cold butter grain looks like sugar grain but never dissolves in your mouth, because it is fat.

One more clue: taste it. Grainy from sugar tastes sweet and slightly sandy. Grainy from cold butter tastes normal and feels bitty. Grainy from a broken emulsion tastes greasy.

Cause 1: the powdered sugar never dissolved

American buttercream is 4 cups of powdered sugar to 1 cup of butter, which is 480 g of sugar against 227 g of fat and only about 30 g of liquid. That is a lot of solid sugar and very little water to dissolve it in.

Powdered sugar does not melt into butter. It dissolves in the small amount of water that comes from the milk or cream, and it gets ground finer by the mechanical action of the paddle. Rush either one and you get grit.

Three things cause this:

You dumped the sugar in all at once. The paddle spins a stiff mass around instead of shearing it. Add the sugar in three additions, beating 45 seconds between each.

You mixed on high. High speed whips air in fast, which feels like progress. It does not dissolve sugar. Low speed applies more shear against the bowl wall and does far more work.

You did not mix long enough. Two minutes is not enough. A properly smooth American buttercream takes about 5 minutes of beating after the last of the sugar goes in.

The fix: put it back on the lowest speed with the paddle, add 1 to 2 tablespoons of warm milk or cream at around 110F, and let it run 5 full minutes. Scrape the bowl twice. Warm liquid dissolves sugar considerably faster than cold liquid, and it also nudges cold butter up into range.

If it is still slightly sandy, cover the bowl and walk away for 20 to 30 minutes. Sugar keeps dissolving on its own while it sits. Rewhip for 2 minutes and it usually comes out smooth.

Cause 2: the butter was too cold

Butter has a narrow working window, roughly 65 to 68F. Below about 60F it stays in firm pieces that the paddle breaks into pellets instead of a smooth cream, and those pellets never fully combine with the sugar.

This is the grain that will not go away no matter how long you beat, because beating cold butter mostly just chills the bowl further.

The fix, in order:

  1. Stop mixing. You are not making progress.
  2. Warm the bowl. Wrap a hot damp towel around the outside for 2 minutes, or fill the sink with a couple of inches of warm water and set the bowl in it for 30 seconds. A kitchen torch waved around the outside of a metal bowl for 5 seconds does the same job.
  3. Whip on medium for 3 minutes. As the pellets soften they smear out and the whole thing turns creamy.
  4. Repeat once if you need to.

Prevention is easier. Butter needs 1 to 2 hours on the counter in a 70F kitchen to come to 65F, and a lot longer in a cold one. There is a useful check: press the block with your thumb. It should dent cleanly without your thumb sinking in and without the butter cracking. Cracking means too cold.

Cause 3: undissolved granulated sugar in a meringue buttercream

Swiss and Italian meringue buttercream start with granulated sugar, not powdered, and the sugar has to be fully dissolved before the butter ever gets involved. If it is not, you get hard grit that no amount of extra whipping will remove.

For Swiss, the egg whites and sugar go over a bain marie and get whisked to 160F. That is the number to hit. Take a little between your fingers and rub: if you feel any grain at all, it is not ready, no matter what the thermometer says.

For Italian, the sugar and water go into a pan and boil to 240F before you stream the syrup into whipping whites. Undercook that syrup and you carry sugar crystals straight into the meringue.

The hard truth: this one cannot be fixed after the butter goes in. The sugar has no water left to dissolve into. You can salvage the batch by using it as a filling where the grain matters less, but the outside coat wants a fresh base.

Two things prevent it next time. Wipe the bowl and whisk with vinegar or lemon juice before you start, because any trace of fat stops the whites from whipping properly, which is covered in our guide on whipping egg whites. And whisk constantly over the water bath rather than stirring, so no sugar sits on the hot bottom of the bowl and crystallizes.

Cause 4: the emulsion broke

Buttercream is an emulsion of water, fat and air. Break it and you get a curdled, split, grainy-looking mess with liquid separating out.

It breaks for one reason: a temperature mismatch. Cold liquid poured into room temperature butter shocks the fat into little solid beads. Warm butter beaten into a cool meringue does the same thing in reverse.

You will most often see this in Swiss and Italian buttercream at the moment the butter goes into the meringue. It looks like curdled soup and every first-timer throws it out. Do not.

The fix: keep whipping. Genuinely. Six to ten minutes on medium and it comes together into something glossy and smooth. The friction of the paddle brings the two temperatures together, and once they match, the emulsion forms.

If ten minutes has not done it:

For cream cheese frosting, the split has a different source: tub cream cheese carries more water and stabilizer gums than block, and it thins out and separates as it warms. Use cold block cream cheese and stop mixing as soon as it is combined.

Cause 5: old, lumpy or coarse powdered sugar

Powdered sugar is ground sugar plus a small amount of cornstarch, usually around 3 percent, to keep it from caking. Two things go wrong with it.

It absorbs humidity and forms hard lumps. Those lumps will not break down in the mixer. They are compressed sugar, and the paddle simply pushes them around.

Not all powdered sugar is ground to the same fineness. The standard retail grind is labeled 10X. Coarser grinds like 6X exist and are noticeably grittier in a frosting that gets no other help dissolving.

The fix: sift. Always, every time, no exceptions. Push the sugar through a fine mesh sieve before it goes near the butter. It takes 60 seconds for 4 cups and it removes every lump. The technique is the same one described in our guide on sifting flour.

Store the bag sealed inside a second airtight container. Powdered sugar picks up moisture from the air faster than granulated does, and a bag that has been open in a humid kitchen for six months is the usual suspect behind lumps that appear out of nowhere.

Cause 6: the add-ins

Sometimes the buttercream is fine and something you stirred into it is not.

Melted chocolate is the frequent offender. Add it too hot and it soups the buttercream. Add it too cold and it sets into tiny chips on contact with cool butter, which reads exactly like grain. Around 90F is the target, and our how to melt chocolate guide covers getting it there without seizing.

Worked example: rescuing a gritty batch

A standard American buttercream: 227 g butter, 480 g powdered sugar, 30 g milk, 4 g vanilla, 1 g salt. It yields about 3 cups. Out of the mixer it is sandy on the tongue.

Step 1. Diagnose. Rub a little between two fingers. It dissolves. Sugar problem, not butter.

Step 2. Check the liquid. The recipe has 30 g of milk against 480 g of sugar. That is thin. Grainy batches almost always started dry.

Step 3. Add warm liquid. Warm 30 g of milk to about 110F, which is warm to the finger and nowhere near hot. Add it in two additions with the mixer on low.

Step 4. Beat on low for 5 minutes. Not medium, not high. Scrape the bowl at 2 minutes and again at 4.

Step 5. Rest and retest. Cover, wait 20 minutes, rewhip 2 minutes, rub between fingers.

You have now added 30 g of extra liquid to a 742 g batch, which is a 4 percent increase and will soften the frosting slightly. If it ends up too soft to pipe, chill it 15 minutes and rewhip, which is the standard recovery in our why is my frosting runny guide.

The finished yield goes from about 3 cups to a little over 3, which does not change anything for a 6 or 8 inch cake but is worth knowing if you were already cutting it close.

Making buttercream that never goes grainy

Six habits, in the order you do them:

  1. Bring the butter to 65 to 68F. Not softer, not harder. This is the single biggest factor.
  2. Beat the butter alone for 3 full minutes first. It should go pale and noticeably lighter. This is the creaming step and skipping it costs you texture you cannot get back later.
  3. Sift the powdered sugar. Every time.
  4. Add the sugar in thirds, on low, 45 seconds between additions.
  5. Warm your liquid. Milk or cream at about 110F dissolves sugar far faster than fridge-cold liquid, and it will not soften the butter noticeably at 30 g.
  6. Finish with 3 to 5 minutes on low. Low speed knocks out air pockets and grinds the last of the sugar smooth. This is also what gives buttercream that dense, silky bakery look instead of a bubbly one.

How do I fix grainy buttercream fast?

Add 1 to 2 tablespoons of warm milk or cream and beat on the lowest speed for 5 minutes with the paddle. If it is still gritty, cover the bowl, wait 20 minutes and rewhip. Between those two steps you fix nearly every sugar-related grain.

Why is my buttercream grainy after refrigerating it?

Cold butter, not sugar. Frosting straight from the fridge is around 40F and the fat is set hard, so whipping it cold breaks it into pellets. Let it sit out for 2 to 3 hours until it reaches about 65F, then whip for 3 to 5 minutes. Our how to store frosting guide has the full revival routine.

Can I fix grainy Swiss meringue buttercream?

If the grain is undissolved granulated sugar from the meringue stage, no. That sugar has nothing left to dissolve into. If the grain is cold butter or a broken emulsion, yes: warm the bowl and keep whipping for 6 to 10 minutes and it comes together.

Does sifting powdered sugar really matter?

Yes, and it is the step people skip most. Powdered sugar absorbs moisture from the air and forms hard lumps that the mixer cannot break down. Sixty seconds with a fine mesh sieve removes all of them.

Why does my cream cheese frosting go grainy?

Usually the tub kind, which contains more water and stabilizers than block cream cheese and separates as it warms. Use cold full fat block cream cheese, beat it only until it is combined, and stop. Overbeating thins it and can split it.

Should I use the paddle or the whisk?

Paddle for American buttercream and cream cheese frosting, because you want density and dissolved sugar rather than air. Whisk for building a meringue, then switch to the paddle when the butter goes in. Finishing on the paddle at low speed is what removes air bubbles.

Why is my chocolate buttercream grainier than the plain version?

Two possible reasons: the cocoa powder went in unsifted, or the melted chocolate was too cool and set into specks the moment it hit the butter. Sift the cocoa with the sugar, and bring melted chocolate down to about 90F before it goes in.

How long should buttercream take to come together?

About 10 minutes total: 3 minutes beating the butter alone, roughly 3 minutes adding the sugar in thirds, then 3 to 5 minutes on low to finish. Batches that took two minutes are almost always the grainy ones.
