Specialty Cake Pan Shapes: Dome, Sphere, Doll and Donut

Specialty cake pan shapes all break the same rule: you cannot fill a curved pan to two thirds of its depth and expect two thirds of its volume. A 6 inch dome pan holds about 3.9 cups to the rim, but filled to two thirds of its depth it takes only about 2 cups, which is 52 percent of capacity. That's the single fact that ruins most first attempts.

Here's the working set of numbers. A 6 inch dome holds about 3.9 cups. A 6 inch sphere (two domes clamped together) holds about 7.8 cups. A classic doll mold holds roughly 5 1/2 cups, just under one box of cake mix. A standard 6 cavity donut pan holds about 2.6 cups total, or a scant 1/3 cup per ring.

Specialty cake pan shapes and what each one holds

Every capacity below is calculated from the geometry of the shape at 14.4 cubic inches per US cup, which is the same conversion the rest of this site uses. Real pans vary a little because of rolled rims and wall thickness, so if a swap looks marginal, measure your own pan with water. Fill it with a measuring cup to just under the rim and count.

For reference against pans you already own: a 6 inch round holds 4 cups, an 8 inch round holds 6, a 9 inch round holds 8, and a 9x5 loaf holds 8. Those are the anchors in the pan converter, and lining your specialty shape up against one of them is how you decide whether a recipe fits.

Why curved pans break the two thirds rule

Fill a straight-sided pan halfway up and you have half its volume. Simple, and it's the reason the standard advice works for rounds, squares and loaves.

A bowl does not behave that way. Volume in a hemisphere is concentrated near the wide top, because area grows with the square of the radius. Down at the point of the bowl, a half inch of depth is a tiny amount of batter. Up at the rim, a half inch of depth is a lot.

Run the numbers on a 6 inch dome, which is a bowl with a 3 inch radius:

Those percentages hold for any hemisphere, whatever its size, because the shape is the same and only the scale changes. So here is the rule worth remembering:

In a dome or bowl pan, fill to about three quarters of the depth. That gives you roughly two thirds of the volume, which is the safe fill level you're used to.

Eyeball two thirds of the depth instead and you've underfilled by 20 percent, and you'll get a squat cake with a flat top rather than the rounded shape you wanted.

Dome and hemisphere pans

Dome pans give you half a ball. Two of them stacked cut side to cut side give you a full ball, which is why they get sold in pairs.

Metal versus silicone. Heavy metal domes conduct well and give a crisper crust. Silicone domes release beautifully and are the practical choice for small sizes, but they insulate, so the bake runs longer and the outside stays pale. Set a silicone dome on a preheated baking sheet, which gets heat into the base and cuts the difference.

Support the shape. A metal dome will not sit flat on an oven rack. Nest it in a ring: an empty tuna can with both ends removed, a metal cookie cutter, or the ring from a springform pan. A silicone dome absolutely needs a rigid tray under it or it will slump and you'll have a wobbly cake and batter in the oven.

Batter choice matters more than usual. A deep curved pan bakes from the outside in, and the middle is a long way from any wall. A dense pound cake or a sturdy chocolate butter cake handles that. A light, airy sponge that relies on a delicate foam structure often collapses in the middle before the center sets. Save the sponge for shallow pans.

Bake it cooler and longer. Drop the oven by 25°F from what a flat layer would use, so most butter cakes go at 325°F instead of 350°F. A 6 inch dome with 2 1/2 cups of batter typically runs 45 to 60 minutes. Do not trust that as a number, though. Depth arithmetic does not carry over cleanly from a flat pan to a curved one, which is why the baking time adjuster is honest about giving a range. Push an instant read thermometer into the deepest part of the cake and look for 200 to 210°F for a butter cake.

Level the base before you flip it. The flat side of a dome cake is the base it stands on, and it always domes up in the oven. Slice that hump off flat while the cake is still in the pan, using the rim as your guide, and the finished cake sits level.

Sphere and ball pans

A sphere pan is two hemispheres that clamp together, usually with a fill hole at the top. It makes the ball cakes you see for sports themes and the hollow shells used for smash cakes.

There are two ways to use one, and they're completely different.

Solid ball. Bake the two halves separately as domes, level both cut faces, then glue them together with buttercream or ganache and carve the seam smooth. This is by far the easier route and it's how most decorators actually do it. Each half is just a dome bake, so all the dome rules above apply.

Baked as a sphere. Clamp the halves, grease and flour thoroughly, and fill through the hole to about two thirds of the total volume. A 6 inch sphere holds 7.8 cups, so pour about 5 1/4 cups. Bake at 300 to 325°F, and expect a long bake, often over an hour, because the center of a 6 inch ball is 3 inches from every surface. Anything faster and the outside is dry before the middle sets.

The seam is the risk. Batter leaks along the join, so run a thin band of grease and flour right into the seam, and set the whole thing on a rimmed sheet. Assume some leakage and plan to trim.

Hollow chocolate spheres are not cake. If you're after a smash cake, that's a chocolate shell molded in the same pan, not a baked one, and the capacity numbers above don't apply.

Doll and wonder mold pans

A doll pan is a tall bell shape that becomes the skirt of a doll, with a plastic or ceramic doll pick set into the top. Geometrically it's a cone frustum with a rounded cap, and a classic one measures roughly 6 1/2 inches across the opening and about 4 1/2 inches deep.

That works out to about 5 1/2 cups to the rim, so pour about 3 3/4 cups of batter. That's a little under one box of cake mix, which makes about 4 1/2 cups of batter according to how many cake mixes per pan size. Bake the leftover cup as two or three cupcakes rather than overfilling, because a doll pan that overflows dumps batter down a very awkward outside wall.

Five things that make a doll cake work:

  1. Use a sturdy batter. Pound cake, a firm butter cake or a doctored box mix. A tender sponge will not survive being carved, skewered and frosted upright.
  2. Grease and flour into every crease. Shortening applied with a brush, then flour, then knock out the excess. The narrow top of a doll pan is where cakes tear.
  3. Bake at 325°F and give it time. These pans are deep. Expect 55 to 75 minutes and check with a thermometer, not a timer.
  4. Level the wide end flat while it's still in the pan so the skirt stands upright.
  5. Cool it fully in the pan for 15 minutes, then turn it out. Rushing this is the number one cause of a torn skirt, and why is my cake stuck to the pan covers the release fixes in full.

If your doll pick is the half doll kind, the cake is the whole skirt. If it's a full doll, you'll need to core a hole down the middle of the baked cake with an apple corer, and wrap the doll's legs in plastic before you insert her.

Donut pans

Donut pans are the shallowest specialty shape and the easiest to get right, with one catch: overfill them and you fill in the hole, and then you have a muffin with a dimple.

A standard cavity is about 3 1/2 inches across and 3/4 inch deep with a center post. That's about 7 tablespoons to the rim, so pour about 4 1/2 tablespoons, which is a scant 1/3 cup. Six cavities take about 1 3/4 cups of batter total.

Mini donut pans hold about 1 3/4 tablespoons per cavity to the rim, so pour about 1 tablespoon each. Twelve minis take about 3/4 to 1 cup.

Pipe, don't spoon. Put the batter in a zip bag, snip a corner, and pipe a ring around each post. Spooning batter into a donut cavity is slow and it always ends with batter over the post.

Fill to just below the top of the post. That's your visual cue, and it beats measuring. The batter rises, meets in the middle at the top, and the hole stays open.

Bake hot and short. Baked donuts are shallow, so they go at 350 to 375°F for 8 to 12 minutes for standard and 5 to 7 for minis. They're done when the top springs back. There's very little margin here and a dry baked donut is a sad thing.

Turn them out fast. Give them 3 to 5 minutes in the pan, then out onto a rack, because sugar and steam trapped against the metal makes the bottoms gummy. The same principle is in how to cool a cake.

A worked example: turning a layer cake recipe into a sphere

You have a chocolate butter cake recipe written for two 8 inch rounds and you want a 6 inch ball for a birthday.

Step 1. Find the recipe's batter volume. Two 8 inch rounds hold 6 cups each, 12 cups total, filled to two thirds. So the recipe makes about 8 cups of batter.

Step 2. Find the sphere's requirement. A 6 inch sphere holds 7.8 cups to the rim. Filled to two thirds you need about 5 1/4 cups.

Step 3. Compare. 5.25 divided by 8 is 0.66, so use about two thirds of the recipe. The remaining 2 3/4 cups is 11 standard cupcakes at 1/4 cup each, which is a useful thing to have when you're carving a ball.

Step 4. Adjust the bake. The original recipe says 350°F for 30 minutes in an 8 inch round, where the batter sits about 1.3 inches deep. In the sphere, the center is 3 inches from the nearest surface. Drop the oven to 325°F and start checking at 55 minutes, looking for 200 to 210°F in the middle.

Step 5. Plan the frosting. A 6 inch ball has a surface area of about 113 square inches, which is close to a 9 inch two-layer round at 177 square inches minus its flat top. Budget around 3 cups of buttercream for a crumb coat and a finish coat, and the frosting calculator will refine it.

Frequently asked questions

How much batter goes in a 6 inch dome pan?

About 2 1/2 cups, which is roughly 63 percent of its 3.9 cup capacity and puts the batter at three quarters of the pan's depth. Filling to two thirds of the depth only gets you about 2 cups, because a bowl holds most of its volume near the rim.

Can I bake a whole sphere cake in one go?

Yes, in a clamped ball pan filled through the hole to about two thirds of its total volume, but it's the harder route. Baking the two halves separately as domes and joining them with buttercream gives a more even bake, a shorter time in the oven, and no seam leakage to clean up.

What size cake pan is a doll cake pan equivalent to?

The deep ones do. Domes, spheres and doll molds all put the center of the cake a long way from any hot surface, so 325°F instead of 350°F stops the outside setting hard before the middle is cooked. Shallow shapes like donut pans need no change, and often go hotter and shorter.

How do I stop a curved cake from sticking?

Brush solid shortening into every curve with a pastry brush, not spray, then dust with flour and tip out the excess. Cocoa powder instead of flour for chocolate cakes so you don't get a white bloom. Can I use these numbers for silicone molds?

The volumes yes, the bake times no. Silicone insulates, so the same batter in a silicone dome takes noticeably longer than in metal and browns much less. Put the mold on a preheated metal sheet, add 10 to 15 minutes, and judge doneness by internal temperature rather than color.

What if my pan isn't on this list?

Measure it with water. Fill it to just under the rim with a measuring cup, note the cups, then multiply by two thirds for straight-sided pans or by 0.63 for bowls and domes.
