Pizza Oven Temperature: The Right Number for Your Oven
The right pizza oven temperature is the highest one your oven will hold, which in a home oven means 500 to 550°F with a stone or steel that has been preheating for at least 45 minutes. Thin-crust pizza bakes in 8 to 12 minutes at that setting. Pan, Detroit and Sicilian styles want less heat and more time, at 450 to 500°F for 12 to 18 minutes. True Neapolitan needs 800 to 900°F and bakes in 60 to 90 seconds, which no domestic oven can do.
The number is really a proxy for one thing: how fast the base can set and color before the toppings dry out. Get that balance and the pizza works. Miss it and you get either a pale, bready base or scorched cheese over raw dough.

The Celsius figures are the exact conversions rather than the rounded ones recipe books print. Why hotter is better, up to the point where it is not
Pizza is a race between two clocks. The base has to set, puff and color from below, and the toppings have to melt and brown from above. In a wood-fired oven at 850°F both finish in about 80 seconds, which is why Neapolitan pizza has a soft, pliable center and blistered spots on the rim. The dough has no time to dry out.
Drop the temperature to 450°F and the base takes 15 minutes to color. Fifteen minutes is long enough for the moisture in the sauce and the cheese to cook away, which is how you end up with a base that is dry all the way through rather than crisp on the outside and soft inside.
The point where hotter stops helping is set by your equipment, not by the pizza. A home oven at 550°F with no stone gives you a pale bottom, because air is a poor conductor and there is nothing beneath the dough transferring heat quickly. That is the whole reason for the stone or the steel: it is the part of the setup that carries the heat, and the oven dial only decides how hot the stone gets.

Preheat time is the single most commonly skipped step in home pizza, and the number is not the oven's beep. When the oven says it has reached 550°F, the air is at temperature and the stone is not. A thick stone can be 100°F behind the air when the oven signals ready. Give it the full 45 to 60 minutes and the difference in the base is dramatic.
Steel conducts heat several times faster than stone, which in practice means a steel at 500°F browns a base about as quickly as a stone at 550°F. If your oven tops out at 500°F, a steel is the better buy.
Position matters as much as the number. Put the stone or steel in the top third of the oven, about 6 to 8 inches below the broiler element, and the pizza gets fierce conduction from below and radiant heat from above at the same time. Many home cooks preheat at maximum bake, then switch to broil for the last 2 to 3 minutes to finish the top. Watch it continuously if you do, because there is very little time between blistered and burned.
What your oven can actually reach
Most domestic ovens are rated to somewhere between 500 and 550°F on the bake setting. That is the number worth checking before planning around it, because the last 50°F is often the difference between an 8-minute pizza and a 14-minute one.
Two honest limitations apply. The first is that your oven is probably not the temperature it says. A home oven measures itself with one sensor near the back wall and cycles its element on and off around a target, and a drift of 25°F or more is ordinary, especially in an older appliance. A standalone oven thermometer on the rack settles the question in one preheat. An infrared thermometer pointed at the stone is even better, because the stone is what actually cooks the pizza.
The second is that the self-clean cycle is not a pizza setting. It runs far above the bake range, it locks the door, and using it to cook is both unsafe and outside what the manufacturer designed the appliance to do. If you want higher heat than your oven's bake maximum, that is what an outdoor pizza oven is for.
Gas oven owners can convert directly: every gas mark is exactly 25°F, and the mark equals degrees Fahrenheit minus 250, divided by 25. That makes 450°F gas mark 8 and 475°F gas mark 9. By the arithmetic 500°F is mark 10, though most gas ovens stop at 9, so the top of the dial is where pizza lives. Convection and fan ovens for pizza
Convection is genuinely useful for pizza, more so than for cake, because moving air speeds up the drying and browning of the top surface that a home oven struggles with.
Use the standard adjustment: drop the temperature by about 25°F or cut the time by roughly 25 percent, and not both. For pizza, most people take the time reduction rather than the temperature drop, since they want all the heat they can get. The one caution is that a strong fan can dry out a lightly topped pizza. If the rim is going papery before the cheese melts, switch back to conventional bake for the last few minutes.
Dough, flour and hydration at high heat
Temperature and dough are not independent choices. The flour that makes a great 850°F Neapolitan pizza makes a disappointing 500°F one.
Italian 00 flour is milled very fine and is built for a 90-second bake. At 500°F it spends 10 minutes in the oven and comes out pale and slightly tough, because it never gets the fast, violent heat it was designed around. For a home oven, bread flour or a good all-purpose flour browns better and gives a crust with more chew. Hydration interacts with temperature the same way. Wetter dough, in the 65 to 70 percent range by baker's percentage, needs high heat to turn its water into steam quickly, and it goes gummy at moderate temperatures. Raw meat toppings and the safety minimums
Most pizza toppings are precooked, but raw sausage, raw ground meat and raw chicken are common, and a short bake does not guarantee they are safe.
The USDA safe minimum internal temperature for ground meats, including raw sausage made from beef, pork, veal or lamb, is 160°F. For all poultry, including raw chicken pieces used as a topping, it is 165°F. For whole cuts of pork, beef, veal or lamb it is 145°F with a 3-minute rest. These are food-safety minimums, not doneness preferences, and they apply on a pizza exactly as they apply in a roasting pan.
In practice, a 60 to 90 second Neapolitan bake will not bring a raw sausage crumble to 160°F in the center, and even an 8-minute home bake is not reliable for thick pieces. The straightforward fix is to cook raw meat toppings separately before they go on the pizza, then use the oven time only to heat them through. If you do top with raw meat, break it into small pieces, spread it thinly, and check the thickest piece with an instant-read thermometer before serving.
Getting the pizza in and out
At these temperatures, the transfer is where most home pizzas fail. A well-built pizza that sticks to the peel becomes a folded pile on a 550°F stone.
Use a generous dusting of semolina or coarse cornmeal on the peel rather than flour, which burns and tastes bitter at pizza temperatures. Build the pizza quickly, because a wet dough sitting on a peel starts sticking within about two minutes. Shake the peel to confirm the pizza moves freely before you approach the oven.
The doneness tests beat the clock every time. The bottom should be firm, dry and spotted with dark patches. The rim should be puffed and colored, not uniformly tan. The cheese should be melted with a few browned areas. Lift an edge with a spatula and look underneath; a pale, soft base means the pizza needs longer or the stone was not fully preheated, and no amount of top color fixes that.
What temperature should I cook pizza at in a home oven?
As hot as the oven goes on bake, which is normally 500 to 550°F, with a stone or steel preheated for at least 45 minutes. If your oven stops at 475°F, use a steel rather than a stone to make up the difference in conduction, and expect 12 to 14 minutes instead of 8 to 10.
How long does pizza take at 450°F?
A thin crust takes roughly 12 to 16 minutes at 450°F, against 8 to 12 at 550°F, and the extra time costs you moisture. Pan and Sicilian styles are genuinely happy at 450 to 475°F, because the thicker dough needs the longer bake to cook through and the oiled pan fries the base rather than relying on a stone.
Can I make Neapolitan pizza in a regular oven?
Not truly. Neapolitan is defined by an 800 to 900°F bake in 60 to 90 seconds, and a domestic oven that tops out at 550°F cannot get close. What you can make is a very good home pizza using the same dough handled differently: use bread flour instead of 00, preheat a steel in the top third, and finish under the broiler. Do I need to preheat a pizza stone, and for how long?
Yes, and for 45 to 60 minutes for a thick stone or 30 to 45 for a steel, starting from the moment you turn the oven on. The oven's ready beep tells you about the air, not the stone. This is the single change that improves most home pizza, and it costs nothing but planning.
What oven temperature is best for frozen pizza?
Follow the box, which is usually 400 to 425°F. Frozen pizzas are formulated around a specific bake, with a par-baked crust that is designed to finish in that window, and running one at 550°F browns the cheese before the middle of the base thaws. A stone is unnecessary and can actually scorch the bottom of a frozen crust.
Why is my pizza base soggy in the middle?
Usually too much moisture combined with not enough heat from below. Fresh mozzarella and a wet sauce both release liquid, and a cool stone cannot drive it off fast enough. Drain fresh mozzarella on paper towels for 20 minutes, use less sauce than feels right, and give the stone its full preheat. Raising the temperature helps only if the surface below the pizza is genuinely hot.
Should I use the broiler to finish a pizza?
It helps in a home oven, where the top browns more slowly than the bottom. Preheat on bake at maximum, launch the pizza, then switch to broil for the last 2 to 3 minutes with the stone positioned about 6 to 8 inches below the element. Stay at the oven door and watch it, because a pizza goes from spotted to black in under a minute at that distance.
Does oven temperature change how long the dough should proof?
Not directly, but the two are linked through the dough's condition. A dough that has overproofed has little sugar left for browning and will look pale even in a hot oven, and one that is underproofed will not puff at the rim no matter how hot the stone is. If the temperature is right and the crust still disappoints, the proof is the next thing to look at.
