The best oven temperature for baked potatoes is 425°F, which is 218°C or gas mark 7, and a medium russet takes 45 to 60 minutes there. Bake them directly on the rack, rubbed with oil and salt, with no foil. They are done when the inside reads 205 to 212°F on an instant-read thermometer.
425°F is high enough to dry and crisp the skin while the inside steams itself fluffy. Lower temperatures work and take longer; higher temperatures risk a leathery skin before the middle is soft. The thermometer, not the clock, is what tells you it is finished.

Times are for a medium russet of about 8 to 10 ounces, unwrapped, straight on the middle rack of a preheated conventional oven. Treat them as planning estimates. Potato size moves them more than anything else does.

The Celsius and gas mark figures are the exact conversions the converter produces. Recipe books round 425°F to 220°C rather than 218°C, and 400°F to 200°C rather than 204°C. Those roundings are smaller than the swing of a normal oven and will not affect the potato.
Size changes the time far more than temperature does
A potato cooks from the outside in, so time scales with thickness, not weight. Doubling the weight of a potato does not double the time, but it does add a lot.

Pick potatoes of similar size for the same tray. A tray with a 5 oz potato and a 14 oz potato on it will not finish together, and there is no oven setting that fixes that. If you are stuck with mixed sizes, pull the small ones early and hold them.
Baking more potatoes does not change the temperature, but a full oven recovers heat more slowly, so a tray of twelve can run 5 to 10 minutes longer than a tray of four.
Internal temperature: the only reliable doneness test
A baked potato is done at 205 to 212°F in the center. Aim for about 208°F.
The reason is physical rather than arbitrary. Potato starch granules absorb water and swell in a process called gelatinization, and the cells that hold them have to separate for the texture to go from waxy to fluffy. That completes right at the top of the range, close to the boiling point of water. A potato at 190°F is cooked and still slightly dense. A potato at 208°F is fluffy.
The tests people use instead are less precise but workable:
- The squeeze. A done potato yields easily under a towel-protected hand. An underdone one feels firm at the center.
- The skewer. A thin skewer or paring knife slides into the middle with no resistance. Any drag means more time.
- The fork. Same idea, less sensitive, because fork tines are thicker.
None of these can tell you the difference between 195 and 208°F, which is the difference between adequate and excellent. This is the same argument the baking time calculator makes about cakes and breads: a time estimate tells you when to start checking, and an internal temperature tells you when to stop.
No foil, and why it matters twice
Wrapping potatoes in foil is the most common baked potato mistake, and it has both a texture and a safety consequence.
Texture. Foil traps steam against the skin. The skin never dries, so it never crisps, and what you get is closer to a steamed potato with a wet, slack jacket. The interior is fine. The skin, which is half the reason to bake a potato rather than boil it, is ruined.
Food safety. This one is worth stating plainly. Clostridium botulinum spores are naturally present in soil and survive baking. Foil creates a low-oxygen environment, which is exactly what those spores need to germinate and produce toxin, and they do it at room temperature. Foil-wrapped baked potatoes left out to cool have caused documented botulism outbreaks. A foil-wrapped baked potato must be held above 140°F, which is the USDA food-safety minimum for hot holding, or unwrapped and refrigerated promptly. Never leave one wrapped on the counter for hours, and never refrigerate it still wrapped.
The safe version, if you must use foil for transport, is to hold above 140°F the entire time and to unwrap before storing. If you just want a good potato, skip the foil entirely.
Prep that actually changes the result
- Scrub and dry thoroughly. A wet skin spends the first ten minutes evaporating instead of crisping.
- Pierce, 4 to 6 times. Steam pressure builds inside a sealed potato, and a burst potato in a hot oven is an unpleasant cleanup. The risk is small but the cost of avoiding it is nothing.
- Rub with oil. A thin coat of any neutral oil, or bacon fat if you have it. Oil conducts heat into the skin and helps it crisp and blister. Butter burns at these temperatures and is the wrong choice here.
- Salt the outside generously. Coarse salt on an oiled skin draws out surface moisture and seasons the part everyone actually eats.
- Bake on the rack, not a pan. Direct rack contact lets air circulate on all sides so the bottom crisps like the top. Put a sheet pan on the rack below to catch drips.
- Do not turn them. Rack-baked potatoes brown evenly without turning, and opening the oven costs you heat.
The two-stage method, if you want the best possible skin
Some cooks split the bake. Start at 400°F for 40 minutes, then raise to 450°F for the last 10 to 15 minutes.
The reasoning is that the interior can climb steadily at the moderate temperature while the skin stays pliable, and then the final blast drives moisture out of the skin fast, right at the point when the inside is already done and cannot be hurt by it. It produces a papery, blistered skin that a straight 425°F bake gets close to but not quite.
The cost is that you have to be there to change the dial, and that the timing gets less forgiving at the end. A straight 425°F bake is 90 percent as good with none of the attention.
A salt crust is the other traditional route: potatoes baked on a bed of coarse salt at 425°F. The salt draws moisture from the skin and holds even heat. It uses a lot of salt, which can be reused a few times, and it gets you a very dry skin.
Convection, gas and altitude
Convection. Drop 25°F, so 425°F becomes 400°F, and start checking 5 to 10 minutes early. Potatoes are one of the things a fan oven genuinely improves, because a dry moving airstream is exactly what a skin needs, and because a full rack of potatoes cooks much more evenly with the fan on. The British convention is a 20°C drop instead, which is about 36°F, a deeper cut than the American rule. Both are rules of thumb rather than measurements of your particular oven. Gas. Gas mark 7 is exactly 425°F, since the scale steps 25°F per mark from mark 1 at 275°F. Gas ovens run more humid than electric ones because burning gas produces water vapor, so the skin can take a few minutes longer to dry. Give it the extra minutes rather than raising the mark.
Altitude. This one is significant. Water boils at about 202°F at 5,000 feet and about 194°F at 8,000 feet, which means the inside of the potato cannot reach the 205 to 212°F target the way it does at sea level. Potatoes at altitude take noticeably longer and are judged by feel rather than by that temperature range: bake until a skewer meets no resistance at all, which can mean 15 to 25 percent more time. Holding, storing and reheating
Baked potatoes are best within about 15 minutes of leaving the oven. After that the skin softens as moisture from the inside migrates outward.
To hold for a short time, leave them in the oven with the heat turned down to 200°F, uncovered, on the rack. Uncovered matters: covering them softens the skin. To store, cool them uncovered, unwrapped, for no more than 2 hours total at room temperature, then refrigerate in a container. They keep 3 to 4 days.
To reheat, 350°F for 15 to 20 minutes brings a refrigerated potato back with a decent skin. A microwave is faster and gives you a soft, slightly rubbery skin. Splitting the potato and reheating cut side down in a skillet with a little oil is the best of the three if you only have one or two.

What kind of potato bakes best?
