So the honest answer is not "throw out your cups." It is "use a scale for the dry ingredients that vary, and stop worrying about the rest."

Where cups actually go wrong
A measuring cup measures volume. Volume is only a reliable stand-in for weight if the density never changes. For most baking ingredients, the density changes constantly.
Flour compacts. Bags settle in shipping. A scoop pushes flour into the cup under pressure. Sifting fluffs it up. All three give you a different amount in the same cup.
Powders trap air unpredictably. Cocoa powder is the worst offender for its size at 85 g per cup, and it clumps, so two cups scooped an hour apart can differ noticeably.
Brown sugar depends on your hands. Packed it is 213 g per cup. Loosely spooned, light brown drops to around 145 g. American recipes assume packed, and how hard you press is your call, not the recipe's.
Powdered sugar depends on sifting. 120 g per cup unsifted, about 100 g sifted. In a frosting that is mostly sugar, a 20 percent swing shows up immediately in the consistency.
Cup sets are not identical. Cheaply stamped nested cups can be off by a few percent, and dry cups and liquid cups are built for different jobs. A liquid cup has headroom above the line, so filling one to the brim with flour gives you more than a cup.

Granulated sugar, by contrast, is steady at 200 g per cup because the crystals are hard and uniform, and water is essentially fixed at 236 g. Those are the ingredients where cups genuinely do fine.
Worked example: what 40 grams of flour actually does
Take a butter cake calling for 2 cups of all-purpose flour, 1 cup of sugar, 1 cup of butter and 4 eggs, baked at 350°F in a 9 inch round.
Weighed: 2 cups spooned and leveled is 250 g of flour. The batter drops off the spatula in a smooth ribbon. The cake bakes for 32 minutes, domes gently, and the crumb is soft and even.
Scooped with a cup: 2 cups scooped straight from the bag is about 290 g. That is 40 g extra, roughly a third of an additional cup, hiding in a recipe you followed exactly.
What those 40 g do:
- The batter is stiffer, so it holds less air during creaming and rises less.
- There is more flour competing for the same water, so the crumb is drier.
- More gluten forms during the same amount of mixing, so the texture is tougher.
- The extra dry mass takes longer to set, so you bake 4 to 6 minutes longer, which dries it further.
Nothing in that list is dramatic on its own. Together they are the difference between a cake people ask about and a cake people politely finish. This is the single most common reason a recipe "works for everyone else."
Compound the effect in a recipe with 5 cups of flour, like a bread dough, and you can be 100 g heavy, which changes the hydration enough to need real correction. That is where baker's percentage earns its keep.
When measuring cups are perfectly fine
Cups deserve some defense. Use them without guilt for:
- Water, milk, buttermilk, cream and oil. Liquids do not compact. Read the line at eye level and you are within a percent or two.
- Teaspoons and tablespoons of leavener, salt, spices and extract. These are small enough that a scale with 1 g resolution cannot read them accurately anyway. A level teaspoon of baking powder is about 4 g, and most scales round that to the nearest whole gram.
- Chunky add-ins. Chocolate chips, nuts, raisins. A handful more or less does not break anything.
- Forgiving recipes. Muffins, pancakes, crumbles. They tolerate a 10 percent flour swing.
- Cooking in general. Soups and sauces do not care.
What that leaves is a short list where weighing genuinely matters: flour, cocoa, powdered sugar, brown sugar, nut flours, and anything you plan to make repeatedly and want identical each time.
How to switch to a scale in one bake
You do not have to relearn baking. The workflow is shorter than the one you have.
- Put the mixing bowl on the scale. Turn it on. It reads 0.
- Set it to grams. Grams give you finer resolution than ounces on the same scale, since most home scales read to 1 g but only to 0.05 oz.
- Add the first ingredient until the display shows the number you want.
- Press tare. The display resets to 0 with the bowl and the first ingredient still on it.
- Add the next ingredient to its number. Tare again.
- Repeat through the dry ingredients.
That is one bowl, no cups to wash, and no chance of losing count of how many cups of flour went in.
Two habits to build. Add slowly near the target, because a scale reacts a half second behind the pour. And check the units on the display before you start, since a bump of the wrong button turns 250 g into 250 oz territory fast.
What to look for in a scale
- Reads to 1 g, not 5 g.
- A capacity high enough for a full mixing bowl, since the bowl itself uses part of the range.
- A flat platform, not a bowl-shaped well, so you can set your own bowl on it.
- A tare button that is easy to hit with a floury knuckle.
- A display you can still read with a big bowl sitting on the platform, or one that pulls out.
- Grams and ounces both, for recipes written either way.
Converting a recipe from cups to grams
Most recipes still come in cups. Converting one is a ten minute job you do once.
Step 1. List every dry ingredient with its cup amount.
Step 2. Look up the gram weight per cup for each. Do not use a single generic number. A cup is 125 g of flour, 200 g of sugar, 227 g of butter, 340 g of honey and 85 g of cocoa. Any chart that gives one number for "1 cup" is wrong for almost everything.
Step 3. Multiply and write the grams next to the cups in the recipe.
Step 4. Bake it once and note anything that felt off. If the dough was drier than the last time you made it with cups, you were scooping heavy before, and the weighed version is the accurate one.

The other things a scale fixes
Halving and thirding. Half of 3/4 cup is a small puzzle. Half of 94 g is 47 g. Scaling a recipe up or down stops involving fractions entirely, and the recipe scaler will do the arithmetic for you.
Sticky ingredients. Honey, molasses, peanut butter and corn syrup all cling to a measuring cup, and what stays behind is missing from your bake. Weigh them straight into the bowl and nothing is lost.
Dividing batter evenly. Weigh the full bowl, divide by the number of pans, then pour to that weight. Two cake layers of the same weight bake in the same time and come out the same height, which is the end of trimming domes to stack them. Measuring cups are faster for small liquid amounts, they need no batteries, and they are what your recipe box is written in. Nobody weighs a teaspoon of vanilla.
The realistic setup in most good home kitchens is both. Scale for the dry ingredients that matter, cups and spoons for liquids and small amounts. That combination is more accurate than cups alone and less fussy than weighing everything.
