How to Score Bread So It Opens Where You Want

Hold the blade at roughly 30 degrees off vertical, almost skimming the surface, and pull one confident stroke 1/4 to 1/2 inch deep. Do it in the last 30 seconds before the loaf goes into the oven, and do not saw back and forth.

That angle is what creates an ear, the raised flap of crust that peels back as the loaf springs. A blade held straight down at 90 degrees gives you a clean decorative line instead, which is the right choice for enriched and sandwich loaves.

Scoring is not decoration first. It is a controlled weak spot, so the loaf expands where you chose instead of tearing open somewhere ugly along the base.

Why a loaf needs a cut at all

A shaped loaf goes into the oven with a taut skin around a soft, gassy interior. In the first 8 to 12 minutes, three things happen fast: trapped gas expands with heat, the yeast has one last burst of activity before it dies off around 140°F, and water inside the dough turns to steam. The loaf can gain 20 to 30 percent in volume during that window. Bakers call it oven spring.

The skin has to give somewhere. If you did not choose a spot, the loaf chooses one for you, and it picks the weakest seam it can find. That is usually the bottom or the side where the dough was sealed during shaping, which gives you a loaf that has burst sideways and flattened.

A score is a deliberate weakness. Gas takes the easy exit, the cut opens, and the rest of the crust stays where you put it. That is the whole idea.

Scoring also does three smaller jobs. It gets you a taller loaf, because upward expansion beats sideways spread. It gives you more crust surface and more of the darker, crisper crust that people are actually after. And it tells you something: a score that barely opens is evidence the dough was overproofed, which is useful information the next time you bake.

How to score bread: the four things that decide the cut

Everything that goes wrong with scoring comes back to one of these four.

1. Sharpness. A blade must slice, not tear. A double-edge razor blade or a purpose-made lame is genuinely sharper than any knife in your drawer, and on a wet dough that difference is the entire game. A dull blade drags, pulls the skin, and deflates the loaf as you cut it.

2. Angle. Nearly flat, around 20 to 30 degrees off vertical, undercuts the skin so a thin flap sits over the opening. As the loaf springs, that flap lifts and dries into an ear. Straight down at 90 degrees just parts the dough and gives you a clean seam.

3. Depth. For lean hearth loaves, 1/4 to 1/2 inch. Shallower and the score seals over during proofing spring, so the loaf bursts elsewhere anyway. Deeper and you cut into the gas structure itself, and the loaf spreads flat instead of rising.

4. Speed and commitment. One pass, moving at a steady clip, without pausing. Hesitation is where dough sticks to the blade. Think of the motion as a single sweep from your elbow rather than a careful pull from your fingers.

Choosing a blade

You do not need special equipment to start, but the gap between a razor and a butter knife is enormous on wet dough.

Two habits make any blade work better. Wet the edge with water before each cut, or wipe it with a drop of neutral oil, so the dough releases instead of clinging. And replace razor blades often, since they dull faster than they look like they should.

Scissors deserve a mention on their own. If you are fighting a very wet dough that sticks to everything, snipping a row of shallow cuts with kitchen scissors held nearly flat sidesteps drag completely. The look is different, more spiky than sleek, but the function is identical.

Depth and angle by loaf type

Different doughs want different cuts, and matching the two saves a lot of guessing.

Enriched dough is the case people get wrong most often. Fat and sugar make a softer, weaker structure with less dramatic oven spring, so a deep angled cut just deflates it. Rye behaves differently again, because rye has very little gluten and holds its gas in a starch and pentosan gel instead of an elastic network. Deep cuts on a high percentage rye do not spring open, they just sit there. Keep those shallow, or skip scoring and let the loaf crack naturally, which is the traditional look for dense rye anyway.

Worked example: one cut on a 900 g batard

Take a batard shaped from 900 g of dough, sitting about 10 inches long after its final proof, retarded overnight in the fridge at 38°F.

The cut: one slash running about 6 inches down the length, offset roughly 1 inch from the center line, blade at 30 degrees, depth about 1/2 inch. That is one stroke lasting a bit under a second.

Why offset: a cut down the exact center opens symmetrically and the flap has nowhere to lean. Offsetting it means the flap has more dough on one side, so it lifts and curls instead of just parting.

What happens in the oven at 475°F with 20 minutes of steam: the loaf gains something like 25 percent in volume in the first 10 minutes. The cut opens to a gap of 1 to 1 1/2 inches at its widest, and the undercut flap lifts and sets into an ear standing 1/2 to 3/4 inch proud of the surface. Total height goes from roughly 3 inches shaped to 4 inches baked.

The failure version: the same loaf scored at 1/8 inch deep. The cut seals during the first two minutes as the surface expands, the gas keeps building with nowhere to go, and the loaf blows out along the seam where it was sealed during shaping. You end up with a lopsided loaf with a pale, torn side and a flat top, from a difference of about 3/8 of an inch in blade depth.

The other failure version: the same loaf scored at 3/4 inch. Now you have cut into the gas structure rather than the skin. The loaf sighs outward, spreads wide instead of climbing, and bakes into something closer to a large flat roll. Deeper is not safer.

Timing: score last, and score cold

Score immediately before the loaf goes in, ideally within 30 seconds. A cut made even five minutes early starts closing as the surface relaxes and the dough continues to proof, and by ten minutes you might as well not have bothered.

Cold dough scores much better than warm dough. Straight out of the fridge at 38 to 40°F, the surface is firm, the fats and gluten are stiff, and the blade parts it cleanly. The same dough at 78°F is slack and sticky and grabs the blade. This is the single biggest reason overnight cold proofing produces such sharp looking loaves, and it works on any dough, not only sourdough.

If you cannot cold proof, get most of the benefit with 20 minutes in the freezer before scoring. That is long enough to firm the outer few millimeters without freezing anything that matters.

A light dusting of flour or rice flour on the surface before you cut does two things. It gives you contrast so the opened score shows clearly against the darker crust, and it reduces drag slightly. Rice flour is popular because it does not brown, so the pattern stays pale.

Scoring, steam, and oven temperature work as one system

A perfect score in a dry oven still gives you a mediocre opening. Here is why.

Steam keeps the crust soft and flexible for the first stretch of the bake. A moist surface stays stretchy, so the score can keep opening for the full 10 to 12 minutes of oven spring. In a dry oven, the surface sets into a rigid shell within about 4 minutes and the score stops opening early, no matter how well you cut it.

Practical setup for a lean hearth loaf:

If you bake uncovered on a stone, add steam some other way and vent it after 20 minutes. Trapped steam past that point softens the crust you are trying to crisp.

Two of those deserve more than a table row.

Overproofing is the most common hidden cause. An overproofed loaf has already used most of its gas and its gluten has weakened, so there is nothing left to push the score open. A simple progression for getting good at this

Skip the wheat stalk patterns for now. Work through these in order and each one teaches the skill the next one needs.

  1. One straight slash down a batard. Teaches angle and commitment. Do this ten times before anything else.
  2. A single arc on a boule. Curving the cut while keeping a constant angle is harder than it sounds and builds real control.
  3. A cross on a round loaf. Teaches you to keep depth even when the blade changes direction.
  4. Baguette cuts, 5 to 7 per loaf. The overlap is the lesson: each cut runs almost parallel to the long axis, not across it, and overlaps the previous one by about a third.
  5. One deep cut plus shallow decoration. Now you can add pattern without giving up structure.

The most common beginner error across all five is pressing down. The blade is sharp enough to part the skin with almost no downward force, and pressure is what deflates the loaf and drags the surface. Move the blade sideways, not down.

Frequently asked questions

How deep should you score bread?

For lean hearth loaves, 1/4 to 1/2 inch. Sourdough and other high spring loaves want the full 1/2 inch, baguettes about 1/4 inch, and enriched or sandwich loaves only 1/8 to 1/4 inch. Deeper than 1/2 inch cuts into the gas structure and makes the loaf spread rather than rise.

Can you score bread with a regular knife?

Yes, if it is genuinely sharp. A serrated knife works reasonably well because the teeth grip the skin instead of pushing it, and a very sharp paring knife is fine on stiff, low hydration dough. Both struggle on wet dough, where a razor edge is the difference between a clean cut and a torn surface.

Why does my bread not open at the score?

Overproofing is the usual answer, since a loaf that has already spent its gas has nothing left to push the cut open. Next most likely is a dry oven, because a crust that sets in four minutes cannot keep expanding. Score depth is the third suspect. Check all three in that order.

When should you score bread, before or after proofing?

After, right at the end, in the last 30 seconds before it goes in the oven. Scoring before or during the final proof lets the cut relax and seal, so you get no benefit from it. The only exception is a decorative stencil pattern, which is dusted on rather than cut.

Do you have to score bread?

Not always. Loaves baked in a pan with a lid, very dense rye, flatbreads, and most enriched rolls do fine unscored. Any free-standing lean loaf with real oven spring benefits, though, because unscored it will burst somewhere you did not choose.
