What Is Autolyse in Bread Baking?
Autolyse is a rest. You mix only the flour and the water from your formula, cover the bowl, and walk away for 20 to 60 minutes before adding the salt, the yeast or the starter. That is the entire technique.
During the rest, the flour fully absorbs the water and the gluten starts forming on its own, with no work from you. So what is autolyse buying you? A dough that needs noticeably less kneading, stretches instead of tearing, and shapes without fighting back.

What is autolyse doing to the dough?
Three things happen in the bowl while you are not looking, and they are worth understanding because they tell you how long to rest and when to skip it.
1. The flour hydrates completely. Dry flour particles absorb water slowly. In a normal mix you knead a dough that is still partly dry in the middle of each particle, which is why dough feels stiff at first and softens as you work it. A 30-minute rest lets water reach every starch granule and every protein strand without any mechanical help.
2. Gluten forms passively. Gluten is not in flour. It builds when two proteins, glutenin and gliadin, meet water and link up. Kneading speeds that along by pushing the strands into contact, but the linking happens on its own given time. A rested dough arrives at the same place with far less work.
3. Enzymes get to work. Flour carries its own enzymes. Amylase breaks a small amount of starch into simple sugars, which later feeds the yeast and helps the crust color. Protease clips some gluten strands, which sounds bad but is the reason autolysed dough becomes extensible, meaning it stretches out rather than snapping back.
That third point is the one people miss. Autolyse does not build the strongest possible gluten. It builds gluten that is strong and stretchy at the same time, which is exactly what you want for shaping.
The technique traces back to the French baking scientist Raymond Calvel, who promoted it in the 1970s as a way to stop overmixing from bleaching the color and flavor out of French bread. It was a fix for industrial mixers, and it turned out to help home bakers just as much.
How long to autolyse, by flour and dough type
There is no single right number. Longer is not automatically better, and past a certain point the protease activity softens the dough more than you want.

The practical band for most home bread is 30 minutes. That is long enough to feel a real difference and short enough that nothing goes wrong.
Above about 2 hours, protease has clipped enough gluten that a lean dough starts to slacken and go sticky. Whole wheat tolerates longer rests than white flour because the bran keeps absorbing water the whole time. Rye tolerates the least, because its enzyme activity is the highest of the common flours.
Why salt and yeast stay out of the bowl
This is the part of the method that gets skipped, and skipping it is why some bakers say autolyse made no difference for them.
Salt tightens gluten. Salt ions shield the electrical charges on gluten proteins, which lets the strands pack closer together. That is good in a finished dough, since it is a large part of why salted dough holds its shape. During autolyse it works against you, because tight gluten hydrates and relaxes more slowly. Salt also slows protease, so the extensibility you are chasing never fully arrives.
Yeast starts fermenting. Add yeast and the clock starts. The dough begins producing gas and acid immediately, and by the end of a 60-minute rest you have entered bulk fermentation without meaning to. On a warm day that can put your timeline an hour ahead of where you thought it was.
Sourdough starter does both. A starter brings yeast and acid together, and acid tightens gluten in its own way.
So the strict order is: flour and water rest first, then everything else.
That said, plenty of bakers add the starter at the beginning and hold back only the salt. That version has a name, fermentolyse, and it is a reasonable compromise when your schedule is tight. It gives you most of the hydration benefit while the fermentation runs in parallel. Just shorten the rest to 20 to 30 minutes so you do not lose track of the bulk.

How to autolyse, step by step
- Weigh the flour and the water from your formula. All of the flour, and all or nearly all of the water. Some bakers hold back a small amount of water to adjust at the end, which is fine.
- Mix until no dry flour remains. Use a spoon, a dough whisk, or your hand. Thirty to sixty seconds. You are hydrating, not developing, so do not knead.
- Cover the bowl. A lid, a plate, or a shower cap. A dried skin on the surface will show up as hard streaks in the crumb.
- Rest at room temperature. Around 70°F is ideal. A warm kitchen shortens the useful window, a cool one lengthens it.
- Add the salt, and the yeast or starter. Sprinkle the salt over the surface. If you want, dissolve it in a tablespoon of the reserved water so it distributes faster.
- Mix or knead to combine. The dough will feel briefly slippery and ragged, then come together fast. This is the moment you notice how much work the rest already did.
- Continue with your normal process. Bulk fermentation, folds, shaping, proofing.

Worked example: a 70 percent hydration loaf
Here is a standard lean formula, run with and without the rest, so the difference is a number rather than a feeling.
The formula. 500 g bread flour, 350 g water, 10 g salt, 5 g instant yeast. That is 70 percent hydration, 2 percent salt and 1 percent yeast in baker's percentages. If you want the arithmetic behind those percentages, our baker's percentage guide works through it.
For reference against volume measures: 500 g of flour is about 4 cups at 125 g per cup, and 350 g of water is a little under 1 1/2 cups. Weighing matters here because a heavy-handed scoop can add 30 g of flour per cup, which would drag this dough down to about 63 percent hydration and change how it behaves entirely.
Without autolyse. Mix everything at once. Knead 10 to 12 minutes by hand, or 8 to 10 minutes in a stand mixer on low. The dough tears for the first several minutes and only starts to smooth out near the end. Windowpane test passes at around minute 11.
With a 30-minute autolyse. Mix 500 g flour and 350 g water for 45 seconds, until no dry flour is visible. The mass looks shaggy and unpromising. Cover, rest 30 minutes.
At the 30-minute mark, uncover it. The dough is visibly smoother and it pulls away from the bowl in one piece. Add 10 g salt and 5 g instant yeast. Knead 5 to 6 minutes by hand. Windowpane test passes at around minute 6.

You spend 25 more minutes of clock time and about 6 fewer minutes of actual work, and the dough shapes better at the end of it. On a bake that already runs 4 to 6 hours, the 25 minutes cost nothing.
When autolyse helps most, and when to skip it
Strongest benefit:
- High hydration doughs, 75 percent and up, where extensibility is the whole game
- Whole wheat and whole grain doughs, where the bran needs the soaking time
- Hand-kneaded lean doughs, since the labor saving is real
- Sourdough, where a long, gentle process suits the method already
- Pizza and focaccia, both of which need to stretch without springing back
Little or no benefit:
- Enriched doughs heavy in butter, eggs and sugar. Fat coats the proteins and blocks gluten development anyway, and these doughs want a strong mix rather than a gentle one.
- No-knead doughs. A 12 to 18 hour fermentation already does everything an autolyse would, several times over.
- Rye-heavy breads. Rye builds very little gluten, so the mechanism barely applies, and its enzymes can turn the dough gummy on a long rest.
- Very low hydration doughs, under about 55 percent. There is not enough water to distribute, so the rest changes little.
- Any dough where you are already mixing in a spiral mixer to full development on a schedule that works.
Skipping it is not a failure. Autolyse is a labor and handling improvement, not a requirement for good bread.
Signs it worked, and signs it went too long
After the rest, uncover the bowl and press the dough with two wet fingers.
It worked if: the surface looks smoother than when you covered it, the mass holds together instead of crumbling, a pinched piece stretches a couple of inches before tearing, and it releases from the bowl in one piece.
It went too long if: the dough is noticeably slacker and stickier than it was, it pools flat instead of holding a mound, and it feels almost soupy at a hydration where it should feel firm. That is protease overreach. It is recoverable with an extra set of stretch and folds during bulk, and the loaf will still bake, but the structure will be softer than you planned. Next time, cut the rest by half.

What autolyse does not fix
Worth stating plainly, because it gets credited with more than it earns.
- It does not replace fermentation. Flavor comes from time with yeast and bacteria, not from a flour-and-water rest.

Frequently asked questions
How long should I autolyse my dough?
Thirty minutes is the reliable default for white bread flour. Use 20 to 30 minutes for all-purpose flour, 45 to 60 for high-protein flour, and 45 to 90 for whole wheat, since bran absorbs water slowly. Going past about 2 hours on a lean white dough starts to slacken it, because the flour's own protease has clipped too much gluten.
Can I autolyse with the salt in?
You can, and the dough will still hydrate, but you lose most of the benefit. Salt tightens the gluten network and slows the enzyme activity that makes autolysed dough extensible. If you want a shortcut, hold back only the salt and add the yeast or starter at the start, which is the fermentolyse version.
Does autolyse work for sourdough?
Yes, and it is common practice. Mix flour and water, rest 30 to 60 minutes, then add the starter and the salt. If your schedule is tight, add the starter at the beginning and hold back only the salt, then shorten the rest to 20 to 30 minutes so bulk fermentation does not get away from you.
Should I use all the water in the autolyse?
Most bakers use all of it, which is simplest. Holding back 20 to 50 g gives you a way to dissolve the salt and to adjust the final consistency after you see how the flour behaved, which is useful with a new bag of flour. Either approach works, so pick one and stay consistent so your results are comparable.
Can I autolyse overnight in the fridge?
You can, and it is a real technique for whole grain doughs, but it is closer to a soaker than a true autolyse. Cold slows the enzymes way down, so a 12-hour cold rest does roughly what an hour at room temperature does. Expect a very extensible dough, and shorten your kneading accordingly.
Do I still need to knead after an autolyse?
Usually yes, just less. Plan on roughly half your normal kneading time, and stop when the dough passes the windowpane test rather than when a timer goes off. Some very high hydration doughs skip kneading entirely and rely on stretch and folds during bulk fermentation instead.
Why is my dough sticky after autolyse?
Two likely reasons. Either the rest ran long enough that protease softened the gluten, or the dough is simply at a hydration you have not worked with before and the stickiness is normal. Wet your hands instead of flouring them, give it a set of stretch and folds, and give it 20 minutes. Adding flour is the last resort, not the first.
Does autolyse change the flavor of the bread?
Indirectly. The enzyme activity releases a small amount of simple sugar, which feeds fermentation and helps the crust brown, and skipping the long aggressive mix protects the carotenoid pigments that carry flavor and cream color in wheat. Both effects are subtle. The large flavor gains come from fermentation time, not from the rest.
