Psyllium Husk Substitutes for Baking
The closest psyllium husk substitutes for baking are ground flaxseed at about 1.5 times the weight, ground chia at about 1.5 times the weight, or xanthan gum at roughly a quarter of the weight. Every one of them holds less water than psyllium does, so you also have to pull liquid out of the recipe: cut about 8 g of water for every 1 g of psyllium husk you remove, then adjust from the dough feel.
That last sentence is the part most swap charts skip, and it is the reason substitutions fail. Psyllium is not just a binder. It is a water sink, and taking it out without taking the water out gives you a wet, gummy, collapsed loaf.

What psyllium husk actually does in a dough
Psyllium husk is the outer coating of the Plantago ovata seed, and it is almost entirely soluble fiber. Hydrate it and it forms a thick, springy gel that behaves surprisingly like gluten: it stretches, it traps gas, and it holds a shape after the heat sets everything else.
Three jobs, specifically.
Structure. The gel builds a stretchy network that lets carbon dioxide from the yeast inflate the dough instead of escaping through it. This is why psyllium made sliceable gluten free sandwich bread possible in the first place.
Water management. Whole husk absorbs roughly 8 to 10 times its own weight in water inside a dough. In a loaf using 16 g of husk, that is 130 to 160 g of water tied up in the gel instead of sloshing around free.
Shelf life. That trapped water stays trapped for a day or two, so a psyllium loaf stales more slowly than one bound with gums alone.
Any substitute has to cover all three, and most cover only one or two. Knowing which job matters most for what you are making is how you pick.

The last row is the honest answer for gluten free yeast bread. No single ingredient in a home pantry replaces psyllium in a loaf. A seed gel plus a gum, together, gets you closest, because the seed gel supplies bulk and water holding while the gum supplies stretch.
Powder versus whole husk, which trips everyone up
These are the same ingredient milled to different sizes, and swapping them by volume is where most psyllium recipes go wrong.
Powder is denser. One tablespoon of whole husk weighs about 5 g. One tablespoon of psyllium husk powder weighs about 8 g, so measuring by the spoon gives you roughly 60 percent more fiber than the recipe wanted.

Powder also hydrates faster and thickens harder, so a batter made with powder can seize before you get it into the pan. If your recipe says "psyllium husk" with no other detail and the photo shows a sliceable loaf, it almost certainly means whole husk.

Ground flaxseed as a psyllium replacement
Flax is the most likely thing to already be in your kitchen, and it works well in anything that does not need to rise tall and hold a slice.
Use 1 1/2 tablespoons of ground flaxseed for every tablespoon of whole psyllium husk. Ground, not whole: intact seeds pass straight through the batter and contribute nothing but crunch. If you only have whole seeds, grind them in a spice grinder right before you use them, because flax oil goes rancid fast once the seed coat is broken.
Flax absorbs about 3 to 4 times its weight in water, against psyllium's 8 to 10. That is the whole reason you cut liquid. It also brings its own oil, roughly 40 percent of the seed by weight, which softens the crumb and shortens the structure a little.
What you get: good binding, a moist crumb, a mild nutty taste, and a slightly darker color. What you do not get: the springy, gas-trapping network that lets a gluten free loaf climb. Flax breads come out shorter and denser.

Chia, xanthan, guar and the rest
Ground chia performs almost identically to flax at the same 1.5 times rate, holds slightly more water, and leaves visible specks unless you use white chia. Whole chia seeds make a lumpy gel that never fully integrates, so grind them.
Xanthan gum is the opposite kind of ingredient. It is a pure hydrocolloid produced by bacterial fermentation, and it is powerful enough that you measure it in fractions of a teaspoon. It gives you viscosity and stretch but almost no bulk and very little water holding, so it will not replace psyllium's job of keeping a loaf moist. Standard rates run about 1/4 tsp per cup of gluten free flour for cakes and cookies, 1/2 tsp per cup for muffins and quick breads, and about 1 tsp per cup for yeast bread. Push past that and the texture goes slimy.
Guar gum comes from a legume and behaves like a milder xanthan. Use about 1.5 times as much. It is a better choice in anything acidic or dairy heavy, where xanthan can go stringy, and a worse choice in a long, hot bake.
Unflavored gelatin is the surprise entry that actually helps yeast bread. Bloom 1 1/2 teaspoons in a little of the recipe's cold water for 5 minutes, then stir it into the warm liquid. It adds chew and helps the crumb hold a slice. It is not vegetarian and it softens if the bread sits somewhere warm.
Agar agar is the vegan answer to gelatin and sets firmer and more brittle. It has to reach a boil to activate, which limits it to recipes where you are heating a liquid anyway.
Glucomannan is roughly three times stronger than xanthan, which makes it easy to ruin a dough with. Start at a third of a teaspoon per tablespoon of psyllium and go up only if the dough will not hold together.
The water math, worked all the way through
Here is a gluten free sandwich loaf as a real example, with numbers you can follow.
The original formula. 400 g gluten free flour blend, 16 g whole psyllium husk (4 percent of the flour weight), 360 g water, 8 g instant yeast, 8 g salt, 20 g oil.
Step 1, find the bound water. 16 g of husk at 9 times its weight holds about 144 g of that 360 g of water in the gel. The remaining 216 g is free water doing normal dough things.
Step 2, pick the substitute. Say you have ground flax and xanthan gum but no psyllium.
Step 3, size the flax. 16 g of psyllium times 1.5 gives 24 g of ground flax. Flax holds about 3.5 times its weight, so it ties up roughly 84 g of water instead of 144 g.
Step 4, do the subtraction. You are freeing 144 minus 84, which is 60 g of water that now has nowhere to go. Cut the water from 360 g to 300 g.
Step 5, add the stretch back. Flax gives bulk but not springiness, so add 2 g of xanthan gum, which is about 2/3 of a teaspoon and works out to 0.5 percent of the flour weight. Whisk it into the dry flour, never into the wet, or it clumps into slippery beads you will never break up.
Step 6, adjust by feel. Mix, then let it sit 15 minutes before judging. Flax and xanthan both keep absorbing during that rest. If it still looks like cake batter after 15 minutes, add 10 g of flour at a time. If it looks like cookie dough, add 10 g of water at a time.
What you should expect. A loaf that rises maybe 15 to 20 percent shorter than the psyllium version, with a tighter crumb and a nuttier taste. Bake it to 205 to 210°F internal, which is the same target described in our guide to telling when bread is done. Gluten free loaves in particular need that internal reading, because the crust color lies.

When you should not substitute at all
Some bakes depend on psyllium in a way nothing else covers. Being straight about that saves you an afternoon.
Gluten free artisan loaves with an open crumb. The stretchy gel is doing gluten's job. No gum reproduces it at the scale needed for a high hydration free-form loaf.
Gluten free pizza and flatbread you want to fold. Foldability comes from an elastic network. Xanthan alone gives you a cracker.
Very low carb doughs built on almond and coconut flour. These have almost no starch to gelatinize, so psyllium is carrying the entire structure. Glucomannan is the only close replacement, and it is fussy.
For everything else, cakes, muffins, cookies, brownies, pancakes, crackers, pie dough, a substitute is genuinely fine. Those are held together by eggs, starch and fat, and psyllium was a minor player to begin with. Common mistakes with psyllium and its replacements
Adding the gum to the wet ingredients. Xanthan, guar and glucomannan all clump instantly in water. Whisk them into the dry flour first, every time.
Judging the dough before the rest. Psyllium doughs and their replacements both keep thickening for 10 to 20 minutes. Nearly every "my dough is too wet" panic disappears if you wait.
Swapping powder for husk by the spoon. Covered above, and worth repeating, since it is a 60 percent overdose.
Using too much of anything. Over-gummed baked goods are slimy, heavy and slightly sticky on the tongue, and no amount of extra baking fixes it. Under-binding gives you a crumbly loaf, which is annoying but edible. Err low.
Expecting the color to match. Some psyllium brands turn baked goods a purple-gray on the inside, which is harmless and comes from natural pigments in the husk. Flax darkens things. Chia speckles them. None of that is a sign anything went wrong.

Go higher in wheat dough and you get a heavy, slightly rubbery texture, since you are adding a second gel network on top of gluten.
Can I use chia seeds whole instead of ground?
Grind them. Whole chia forms individual gel beads that hold water inside the seed coat instead of spreading it through the dough, so the batter stays wet while the seeds stay slippery. Grinding releases the mucilage into the mix, which is the part actually doing the binding.
Why did my gluten free bread turn purple inside?
That is the psyllium, not a problem. Certain husk batches contain natural pigments that shift color in an alkaline batter, and the effect shows up most in loaves with baking soda. The bread is fine to eat, the taste is unchanged, and switching brands usually ends it.
Do I need to change the bake time when I swap out psyllium?
Usually yes, and usually downward. Removing psyllium removes bound water, so there is less moisture to drive off and the loaf finishes 5 to 10 minutes earlier. Stop trusting the clock and pull it at 205 to 210°F internal, since gluten free crusts color long before the center is set.
