Kosher Salt vs Table Salt: The Swap That Quietly Ruins Bakes
Kosher salt vs table salt is a volume problem, not a chemistry problem. By weight they're nearly the same thing, but the crystals are wildly different sizes, so a teaspoon of one holds far more salt than a teaspoon of the other. The working conversion is 1 teaspoon table salt = 1 1/4 teaspoons Morton kosher = 2 teaspoons Diamond Crystal kosher.
Swap them one for one and you're either doubling the salt or halving it. In a bread dough that's the difference between a good loaf and one that tastes like the ocean.

Read the last column again. Diamond Crystal is almost exactly half as dense as table salt. That's not a rounding difference, that's a doubling error waiting to happen.
Coarse sea salt is the one to distrust most. Crystal size varies enormously between brands, so treat that row as a rough starting point and taste as you go.

Notice the range in that weight column. When a recipe just says "kosher salt" without naming a brand, you genuinely don't know whether it means 3 grams or 5 grams per teaspoon. That ambiguity is the whole reason careful recipe writers now specify the brand or give grams.

Why the two kosher brands aren't even close
Both boxes say kosher salt. Both contain the same sodium chloride. They're made completely differently.
Diamond Crystal uses the Alberger process, where brine is evaporated in a way that grows hollow, four-sided pyramid flakes. Those flakes are full of air, they crush between your fingers, and they pack loosely in a spoon. That's why a cup weighs only 145 grams.
Morton kosher starts with ordinary cubic crystals and runs them through rollers that flatten them into dense flakes. There's no hollow interior, so the same cup holds 241 grams, two thirds more salt.
Practical consequences beyond the math:
- Diamond Crystal dissolves faster in dough and batter, so it distributes more evenly in a short mix
- Diamond Crystal is much harder to over-salt with, which is why most professional kitchens standardize on it
- Morton's denser flakes cling well to pretzels and focaccia tops and stay visible after baking
- Morton contains an anti-caking agent (yellow prussiate of soda) while Diamond Crystal is pure salt
The name has nothing to do with certification, by the way. It refers to koshering meat, where coarse crystals draw out blood without dissolving instantly. Both brands happen to be certified kosher, but so is most table salt.
Worked example: 500 grams of bread flour
Bread bakers set salt as a percentage of flour weight. The standard is 1.8 to 2%. Take a small loaf with 500 g of bread flour and a 2% salt target.
Target: 10 grams of salt.
Now measure that three ways:
- Table salt: 10 ÷ 6.1 = 1.64 tsp, so 1 2/3 teaspoons
- Morton kosher: 10 ÷ 5.0 = 1.99 tsp, so 2 teaspoons
- Diamond Crystal: 10 ÷ 3.0 = 3.31 tsp, so 1 tablespoon plus 1/3 teaspoon
Same loaf, same saltiness, and the spoon amounts run from 1 2/3 to 3 1/3. If a recipe developer worked in Diamond Crystal and wrote "1 tablespoon plus 1/3 teaspoon of kosher salt," and you reached for table salt, you'd put in 20 grams. That's 4% salt. The dough would ferment sluggishly, the crumb would be tight, and nobody would finish a slice.

Iodized salt, anti-caking agents, and why bakers argue about it
Iodized table salt is regular salt with potassium iodide added, plus a small amount of dextrose to keep the iodide from oxidizing, plus an anti-caking agent so it pours. For baking, here's the honest version.
Where it doesn't matter: cookies, cakes, muffins, quick breads, and most yeast doughs. The salt is under 2% of the flour weight and it's competing with sugar, butter, vanilla, and browning. Blind taste tests rarely separate iodized from non-iodized in a finished bake.
Where it does matter:
- Brines and pickles, where the anti-caking agent clouds the liquid
- Finishing salt on top of anything, where you taste the salt on its own
- Very lean, very plain doughs like a simple baguette, where a faint metallic note has nowhere to hide
- Large batches, where a subtle off-note scales up with everything else
If you keep one salt in the kitchen, make it non-iodized fine sea salt or Diamond Crystal. If you keep two, keep table salt for precision and a kosher salt for hand-seasoning. There's no need to throw out the iodized box.
What salt actually does in a bake, beyond flavor
Salt is the most under-respected ingredient in baking, and skipping it does more than make things bland.
It strengthens gluten. Gluten proteins carry electrical charges that push each other apart. Chloride ions from salt shield those charges, letting the strands pack closer and bond more tightly. A salt-free dough is slack, sticky, and tears easily. Add the salt and within minutes the same dough tightens and becomes manageable. Bakers who use the autolyse method hold salt back on purpose for exactly this reason, then add it once the flour is hydrated.
It slows yeast. Salt pulls water away from yeast cells osmotically, which throttles fermentation. That sounds bad and is actually good. A slower rise means more time for flavor compounds to develop and less risk of the dough over-proofing and collapsing. At 1.8 to 2% of flour weight you get controlled fermentation. Above about 2.5% the yeast struggles noticeably and your rise times stretch out.
It balances sweetness and suppresses bitterness. Salt blocks bitter receptors and heightens sweet perception at the same time. That's why a caramel with salt tastes more caramel-like, not saltier. It is also why saltine toffee without chocolate leans on a salted cracker to carry the flavor. It's also why an under-salted cake tastes flat and one-note even though it has plenty of sugar. If a cake tastes like it's missing something and you can't name what, the answer is almost always salt.
It slows staling a little. Salt is hygroscopic, so it holds a small amount of moisture in the crumb. The effect is modest but real over a couple of days.

When a recipe just says "salt"
American recipes that say "salt" with no qualifier almost always mean table salt, especially anything older or from a general-interest source. Restaurant-adjacent and modern food-media recipes usually mean Diamond Crystal, and increasingly they say so.
Three tells that a recipe means kosher salt even when it doesn't say:
- The amount looks high. A cookie recipe calling for 1 1/2 teaspoons of salt for 2 cups of flour is a kosher salt amount. In table salt that would be 9 grams, which is nearly 4% of the flour.
- The author says "flaky" or "coarse" anywhere in the ingredients.
- There's a separate finishing salt listed. Anyone thinking about finishing salt is thinking in kosher.
When in doubt, convert to weight, compare against the percentage table above, and see which reading lands in range. That check takes ten seconds and it catches the doubling error every time.

The three fixes, in order of how well they work
- Weigh it. A cheap digital scale that reads to 1 gram settles every question on this page permanently. Salt amounts in baking are small, so if your scale only reads to 2 grams, weigh out a tablespoon and divide.
- Standardize on one salt. Pick one, learn it, and convert everything into it once. Most home bakers do best with fine sea salt for baking and one kosher salt for seasoning.
- Use the table above. Slower and less exact, but it works and you already have it.
What doesn't work is eyeballing it, because the error runs in the dangerous direction. Under-salting gives you a dull bake. Over-salting gives you an inedible one, and in yeast dough it also wrecks the rise.

Can I substitute table salt for kosher salt?
Yes, but not one for one. Use half as much table salt as Diamond Crystal kosher, or about three quarters as much as Morton kosher. So 2 teaspoons of Diamond Crystal becomes 1 teaspoon of table salt, and 1 teaspoon of Morton becomes a scant 3/4 teaspoon of table salt.
How much table salt equals a tablespoon of kosher salt?
If it's Diamond Crystal, 1 tablespoon (9.1 g) equals 1 1/2 teaspoons of table salt. If it's Morton, 1 tablespoon (15.1 g) equals about 2 1/2 teaspoons of table salt. The two kosher brands differ by two thirds, so the brand matters more than the kosher-versus-table distinction does.
Why is Diamond Crystal so much lighter than Morton?
Diamond Crystal crystals are hollow pyramids grown by the Alberger process, so they're full of air and pack loosely. Morton crystals are ordinary cubes rolled flat into dense flakes. Same salt, very different volume. A cup of Diamond Crystal weighs 145 g while a cup of Morton weighs 241 g.
Does kosher salt taste different from table salt?
Pure sodium chloride tastes the same either way. What differs is the delivery: bigger crystals dissolve more slowly, so kosher salt reads as gentler and less sharp when you taste it directly. Once it's dissolved in a dough or batter, there's no flavor difference from crystal size at all.
Is iodized salt bad for baking?

Can I use sea salt instead of kosher salt in baking?
Fine sea salt substitutes for table salt at 1:1 and for Diamond Crystal at half the volume. Coarse sea salt is the unpredictable one, since crystal size varies a lot by brand, so weigh it rather than measuring by spoon. In dissolved applications like dough, sea salt's mineral content makes no detectable difference.
What happens if I leave the salt out of bread dough?
The dough turns slack and sticky because the gluten never tightens, the yeast races ahead without anything slowing it, and the loaf over-proofs and often collapses. The crust also stays pale, since fermentation burns through the sugars that would have browned it. And it tastes like paper.
How much salt should be in a cookie recipe?
About 1 to 1.5% of the flour weight, which is 2.5 to 4 grams for a standard 2 cup (250 g) flour batch. In spoons that's roughly 1/2 teaspoon of table salt, 3/4 teaspoon of Morton, or 1 1/4 teaspoons of Diamond Crystal. Salted butter already contributes some, so trim a pinch if you're using it.
