White chocolate vs candy melts is a fat question. Real white chocolate is built on cocoa butter, so it tastes better and needs tempering to set properly. Candy melts are built on vegetable fat, usually palm kernel oil, so they set hard and glossy with no tempering at all and taste sweeter and waxier.

Pick by the job. Candy melts for anything dipped, molded or colored. White chocolate for anything eaten on its own, or stirred into a ganache, batter or frosting. They are not interchangeable in a mold, and they are not interchangeable in a bowl of ganache either.

What each one is actually made of

White chocolate has a legal definition in the US. To be labeled white chocolate it needs at least 20 percent cocoa butter, at least 14 percent total milk solids, at least 3.5 percent milkfat, and no more than 55 percent sugar. There are no cocoa solids in it at all, which is why it has no chocolate color and no chocolate flavor. It's cocoa butter, dairy and sugar.

Candy melts have no legal definition, because they aren't chocolate. The category names are confectionery coating, compound coating, summer coating, and almond bark. All of them mean the same thing: the cocoa butter has been replaced with a hard vegetable fat, usually palm kernel oil, sometimes fractionated coconut oil. Then sugar, milk solids, color and flavor go in on top.

That single substitution changes everything downstream, because cocoa butter and palm kernel oil crystallize completely differently.

Cocoa butter is polymorphic. It can set in six different crystal forms, and only one of them (Form V) gives you snap, gloss and a clean release from a mold. Getting Form V is what tempering is. Our tempering guide walks through it.

Palm kernel oil isn't fussy. It has essentially one useful crystal form, it sets at a higher temperature, and it gets there without any coaxing. Melt it, use it, let it firm up. That's the whole appeal.

The two rows that decide most projects are tempering and flow. Candy melts exist because dipping 60 cake pops with tempered white chocolate is a real skill and dipping 60 cake pops with candy melts is not.

When candy melts are the right call

Cake pops and anything on a stick. The coating needs to set fast enough to stop dripping and firm enough to hold weight. Candy melts do both without a thermometer.

Molds. Compound coating shrinks slightly as it sets and releases cleanly from plastic molds. Untempered white chocolate sticks, and tempered white chocolate takes practice.

Colored coatings. Candy melts come pre-colored, which saves the fight described below over coloring white chocolate.

Drizzles, spatters and decorations that sit at room temperature. Compound coating holds up in a warm kitchen far better than cocoa butter does.

Dipped pretzels, cookies and spoons for a crowd. Speed and reliability over flavor, every time.

Anything a beginner is doing under time pressure. This is not a small point. Failed tempering wastes a whole bowl and an hour you didn't have.

When real white chocolate is the right call

Ganache. Cocoa butter and cream emulsify into something silky. Palm kernel oil and cream separate into a greasy mess. There's no fix for that one, so use real chocolate. Our ganache ratio guide has the amounts, and white chocolate needs a much higher chocolate-to-cream ratio than dark does because it's softer.

Anything stirred into a batter or dough. Cocoa butter melts at body temperature and disappears. Compound coating leaves a waxy trace in the mouth that's very obvious in a soft cookie.

Buttercream and mousse. Same reason. The fat has to melt when you eat it.

Bark and anything eaten as candy. Flavor is the entire product.

Truffle shells and fine work, where the snap and the thin, glossy shell are the point.

Anywhere the label matters. If you're selling it, "white chocolate" means something specific and compound coating cannot be called that.

The coloring problem, and why it catches people

You can't color white chocolate with the food coloring in your cabinet. Both gel and liquid colors are water-based, and even a few drops of water into melted chocolate causes seizing: the sugar and cocoa particles grab the water, clump, and the smooth mass turns into grainy paste in seconds.

The fix is oil-based candy color, sometimes sold as candy color or chocolate color. Add it to the chocolate at the same temperature, a few drops at a time. Our gel vs liquid food coloring guide goes through which color type belongs in which application.

Candy melts seize on water too, so the same rule applies. The difference is that candy melts already come in the color you wanted, so most people never have to solve it.

Two practical notes. White chocolate has a yellow-cream base, so pastels come out muted and true white is impossible. And a wet spatula is the most common cause of a seized bowl. Dry every tool.

How to thin either one for dipping

Both get thick as they cool, and thick coating means heavy, lumpy, streaky results. Neither problem is solved with water or milk. Fat thins fat.

Add the thinner while the coating is warm, stir it in fully, and give it a minute before you judge. Adding more because it "still looks thick" thirty seconds in is how coatings end up too soft to set.

Worked example: dipping 48 cake pops

A cake pop takes roughly 12 to 14 grams of coating for a clean, thin shell. Call it 13 grams.

48 pops x 13 g = 624 g of coating actually used.

But you can't dip in a nearly empty bowl. You need enough depth to submerge a pop in one motion, which for most cups means 350 to 450 g sitting in there at all times. So melt about 1,000 g, use 624 g, and pour the remaining 376 g onto parchment to set and re-melt another day.

If you'd rather work in cups, a cup of chocolate chips weighs 170 g, from our ingredient weight chart, and candy melts sit close to that. So 1,000 g is about 6 cups.

Thinning it: 6 cups melted takes 6 to 12 teaspoons of shortening, which is 2 to 4 tablespoons. Start with 2 tablespoons, stir, and add more only if the coating doesn't sheet cleanly off a spoon.

Temperature: melt candy melts to 110 to 115°F and hold them near 100°F while you work. For white chocolate, melt to 105 to 110°F, temper down, and work at 84 to 86°F, which is the tempered working band from our tempering guide.

The pattern: going from candy melts to white chocolate costs you convenience. Going from white chocolate to candy melts costs you texture and flavor. Decide which one your project can spare.

Almond bark, by the way, is a compound coating too, despite the name, and it usually contains no almonds. It's a candy melt sold in a slab instead of a bag, and it behaves the same way.

Neither belongs in the fridge unless your kitchen is genuinely hot. Condensation on cold chocolate is a seizing accident waiting for its moment.

FAQ

Do candy melts need to be tempered?

No, and that's the whole reason they exist. The vegetable fat in them sets hard and glossy on its own. Just melt them gently, keep them under about 120°F, and let them firm up at room temperature.

Can I use white chocolate instead of candy melts for cake pops?

Yes, if you temper it. Untempered white chocolate stays soft, streaks, and blooms within a day, which on a cake pop means a dull, sticky shell that slides. Tempered, it tastes far better than any candy melt.

Why won't my candy melts set hard?

Almost always too much thinner, or a thinner that never sets. Vegetable oil and butter stay liquid at room temperature, so they keep the coating soft forever. Use solid shortening or paramount crystals, and no more than 2 teaspoons per cup.

Are candy melts real chocolate?

No. Real chocolate has to contain cocoa butter as its fat, and candy melts use palm kernel or coconut oil instead. That's why they're labeled confectionery coating or candy coating rather than chocolate.

Is almond bark the same as candy melts?

Essentially yes. Almond bark is a compound coating sold in blocks or discs, made the same way with vegetable fat, and it typically contains no almonds at all. Use it anywhere a recipe calls for candy melts.

Can I mix white chocolate and candy melts together?

You can, and people do it to get better flavor with easier handling. Once you add compound coating you can't temper the mixture properly, so keep candy melts at a majority of the blend and treat the whole bowl as a coating rather than as chocolate.

Which one tastes better?

Real white chocolate, clearly. It's cocoa butter and dairy, so it melts on the tongue and tastes creamy. Candy melts taste sweeter and flatter with a coating on the palate afterward, which is the vegetable fat, since it doesn't melt at body temperature.

What temperature should I melt each one to?

White chocolate to 105 to 110°F, and never above 115°F because the milk solids scorch. Candy melts to 110 to 115°F with a ceiling around 120°F. Both do best melted to about 70 percent and stirred until the last lumps disappear on their own.
