Don't run to the store. For 1 cup of light brown sugar, mix 1 cup of white granulated sugar with 1 tablespoon of molasses. For 1 cup of dark brown sugar, use 2 tablespoons of molasses with the same 1 cup of white sugar. Stir with a fork until the color is even and no dark streaks are left, then measure and use it exactly like the brown sugar in your recipe.

This is not a workaround. It's the same product. Commercial brown sugar is refined white sugar with molasses sprayed back onto the crystals, so when you mix your own, you're doing at home what the factory does.

Brown sugar isn't a different sugar

Here's the thing almost nobody tells you, and it changes how you shop.

Sugar cane juice gets boiled and spun in a centrifuge. The syrup that spins off is molasses. The crystals left behind are white sugar. That's refining, and it's one process producing two things.

To make brown sugar, the refinery takes that white sugar and adds a measured amount of the molasses back. Light brown sugar is about 3.5% molasses by weight. Dark brown sugar is about 6.5%. That's the entire difference between the two bags on the shelf, and the entire difference between brown sugar and white.

So a brown sugar substitute isn't really a substitute at all. You're reassembling the product from its two parts. One tablespoon of molasses weighs about 20 grams, and a cup of white sugar weighs about 200 grams, which lands you right around that 3.5% mark for light brown. Two tablespoons puts you near 6.5% for dark. The math works because the recipe is that simple.

Once you know this, you can stop keeping brown sugar in the pantry entirely. A jar of molasses lasts years and never hardens.

What the molasses actually does

This matters more than the color, and it's what decides whether any given substitute will work in your recipe.

Moisture. Molasses is roughly 20 to 25% water, and it's hygroscopic, meaning it actively pulls water out of the air and holds onto it. That moisture stays in the dough and stays in the finished cookie. It's the reason brown-sugar cookies come out soft and chewy and stay that way for days, while all-white-sugar cookies bake up thin, crisp, and snappy. Same recipe, same oven, completely different cookie.

Acidity. Molasses runs acidic, around pH 5 to 5.5. If your recipe uses baking soda, that acid is part of the leavening system. The soda needs an acid to release carbon dioxide, and in a lot of cookie and quick-bread recipes the brown sugar is the only acid in the bowl. Take it out and you get less lift. The acid also speeds up browning, which is why brown-sugar bakes look darker and taste more caramelized. Flavor. Molasses brings caramel, toffee, and a faint bitter edge from the minerals left in it. That's the flavor people mean when they say a cookie tastes "rich" rather than just sweet.

Any substitute that delivers all three does the job. One that only delivers color does not.

Reading the crunchy sugars row

Demerara and turbinado get sold as "raw" or "natural" brown sugars, and they look the part. They're not interchangeable with brown sugar in a mixer bowl.

Both are partially refined cane sugars with big, hard crystals and only a thin coating of molasses. They don't hold moisture the way brown sugar does, and the crystals are too large to cut air into butter during creaming. Use them and your cookies spread wrong and turn out sandy.

Where they shine is on top. A tablespoon of turbinado on a muffin before baking gives a crackly sugar lid that brown sugar can't produce.

Muscovado is the opposite problem. It's unrefined, so all of the molasses is still there and it's often 8 to 10% by weight. It's damp, sticky, and clumps in the measuring cup. Fantastic flavor, but cut a tablespoon or two of liquid from the recipe to compensate.

The liquid sweetener math

Swapping a dry sugar for a liquid one changes three things at once, so here's the full adjustment.

  1. Use less. Honey is sweeter than sugar, so 2/3 cup replaces 1 cup of brown sugar. Maple syrup is closer, so use 3/4 cup.
  2. Cut other liquid by 3 tablespoons per cup of sugar replaced, since you just added liquid to a dry-ingredient slot.
  3. Drop the oven temperature by 25°F and start checking early. Both honey and maple contain fructose, which browns at a lower temperature than table sugar. Without this step your cookie bottoms burn while the centers are raw.
  4. Add 1/4 teaspoon of baking soda per cup of honey if the recipe doesn't already have plenty. Honey is acidic and the soda neutralizes it, which also helps the rise.

How to make brown sugar at home, step by step

Takes half a minute. No special tools.

  1. Measure 1 cup of white granulated sugar into a bowl. A wide bowl beats a narrow one here.
  2. Add 1 tablespoon of unsulphured molasses for light brown, or 2 tablespoons for dark.
  3. Mash and stir with a fork, pressing the molasses into the crystals. Keep going until the color is completely even with no dark clumps. This takes 30 to 60 seconds by hand.
  4. For a bigger batch, use a stand mixer with the paddle on low for about a minute, or pulse it in a food processor 10 to 15 times.
  5. Use immediately, or store in an airtight jar. It will keep as long as store-bought and hardens the same way.

A note on molasses type. Use unsulphured molasses, the standard grade sold in every supermarket. Blackstrap molasses is the third boil, much more bitter and much less sweet, and it will make your cookies taste medicinal. If blackstrap is all you have, use half the amount and expect a darker, more assertive flavor.

Light vs dark brown sugar: does it matter?

They swap for each other 1:1 in every recipe. Nothing breaks. The only change is flavor intensity and color.

Whether you notice depends entirely on what you're baking.

It matters in: chewy chocolate chip cookies, gingerbread, oatmeal cookies, sticky toffee pudding, brown butter blondies, anything where the sugar is a headline flavor. Dark brown sugar makes these noticeably richer, darker, and a touch moister. Swapping light for dark in a gingerbread recipe is a real downgrade. It barely matters in: cake batters, muffins, quick breads, anything with strong competing flavors like banana or pumpkin, and anything where brown sugar is a minor ingredient. Use whichever bag is open.

If a recipe just says "brown sugar" with no qualifier, it means light. That's the US default.

Want dark from light? Add 1 teaspoon of molasses per cup and stir it in. Want light from dark? You can't remove molasses, but mixing 1/2 cup dark brown with 1/2 cup white sugar lands close.

Why brown sugar turns into a brick, and how to fix it

The molasses coating is what makes brown sugar soft. When that thin film of moisture evaporates, the sugar crystals touch each other directly and fuse into one solid mass. Your bag didn't spoil. It dried out.

Hardened brown sugar is perfectly good. It just needs its water back.

The terracotta disc (best long-term fix). Soak an unglazed terracotta brown sugar saver in water for 15 to 20 minutes, pat it dry, and drop it in the container. The clay releases moisture slowly for weeks. Re-soak it monthly. This is the only method that both softens and then keeps it soft.

The bread slice (overnight fix). Put a slice of plain sandwich bread in an airtight container with the sugar and seal it. Wait 8 to 12 hours. The sugar pulls moisture from the bread and softens all the way through. Pull the bread out once it goes stale and hard, or it will mold.

An apple wedge works the same way and a little faster, but it can pass on a faint apple smell and it molds sooner. Check it after 24 hours.

The microwave (emergency fix, 30 seconds). Put the hardened sugar in a microwave-safe bowl, lay a damp paper towel directly over it, and cover the bowl with a plate. Microwave 20 seconds, break it up with a fork, and repeat in 20-second bursts until it crumbles. Use it within a few minutes. The heat drives moisture into the crystals but also starts melting them at the edges, and once it cools it sets up harder than before.

How to stop it happening. Get it out of the paper bag. Transfer to a genuinely airtight container, glass or heavy plastic with a gasket lid, and store it away from the stove and any heat source. Squeeze the air out if you're using a zip-top bag. Stored this way it stays scoopable for a year or more.

Measuring brown sugar: the packing rule that ruins recipes

Brown sugar is the one sugar you pack. Every US recipe assumes it, most of them don't say it, and getting it wrong is a genuinely common reason bakes fail.

Press the sugar firmly into the measuring cup with the back of a spoon, level the top, and it should hold its shape like wet sand when you tip it out.

An unpacked cup can leave you nearly a third short on sugar. In a cookie that means less spread, a drier and more cakey texture, and much less browning. In a caramel or a frosting it changes the whole ratio.

The fix that removes all doubt: weigh it. 1 cup packed brown sugar = 213 g. Set a bowl on the scale, zero it, and spoon until it reads 213. No packing, no guessing, no cup to wash.

For reference while you're in there: 1 cup white granulated sugar is 200 g, 1 tablespoon of molasses is 20 g, and 1 cup of coconut sugar is about 155 g, which is why coconut sugar doesn't behave like a 1:1 swap by weight even though it works by volume.

Worked example: chocolate chip cookies, three ways

Take a standard drop cookie recipe: 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, 1 cup butter, 1 cup packed brown sugar, 1/2 cup white sugar, 2 eggs, 2 cups chocolate chips. Bake at 375°F for 9 to 11 minutes.

Only the brown sugar changes.

Batch A: real light brown sugar, 1 cup packed (213 g). Cookies spread to about 3 inches. Edges set, centers stay soft. Golden brown all over. Still chewy on day three in a sealed container. This is the control.

Batch B: 1 cup white sugar (200 g) + 1 tablespoon molasses (20 g). Spread, color, and chew are the same as Batch A. Side by side on a plate, nobody picks out which is which. The extra 7 grams of total weight is inside normal variation between scoops.

Batch C: 1 cup white sugar (200 g), no molasses. Spreads wider, to about 3 1/2 inches, and comes out thinner. Pale gold instead of brown, because the acid that was speeding up browning is gone. Crisp all the way through with almost no chew, and by day two they snap. The baking soda also has less acid to react with, so there's slightly less lift.

None of Batch C is inedible. It's a good crisp cookie. It just isn't the cookie the recipe was written for, and now you know exactly which ingredient did that.
