The classic gingerbread house size is a 5 inch front wall, 4.5 inch side walls, 3.5 inches to the eaves and 5.5 inches to the peak, with two roof panels of 5.5 x 3.75 inches. That's six panels totaling about 118 square inches of dough, which fits on one 13x18 half sheet pan rolled to a quarter inch.

Every other size is that shape scaled. The proportions are what make a gingerbread house look like a house instead of a shed or a bird box, and they hold whether you're building a 3 inch place-card cottage or a 9 inch centerpiece.

The proportion rules that make it look right

Start with one number: W, the width of the front wall. Everything else comes off it.

Those numbers aren't arbitrary. The roof takes up about 36 percent of the total height, which is the range that reads as a cottage. Drop the peak below 1.0 x W and it starts looking like a garden shed. Push it past 1.3 x W and you've built a chapel.

The roof panel depth is the only one people get wrong, because it isn't a dimension you can measure off the house. It's the slope, and the slope is a hypotenuse.

The slope math. Half the front wall is your run, and the peak minus the eaves is your rise. On the 5 inch house that's a run of 2.5 and a rise of 2.0. Square them, add them, take the square root: 6.25 plus 4.00 is 10.25, and the square root of that is 3.20 inches.

Then add half an inch of eaves overhang and you get 3.7 inches, rounded to 3.75. Cut a roof panel to the 2.5 inch half-width instead of the 3.2 inch slope and it will not reach the ridge, which is the single most common template failure.

The front and back panels are given as a bounding rectangle. The panel itself is a rectangle up to the eaves height with a triangle on top: on the classic house, that's a 5 x 3.5 inch rectangle plus a triangle 5 inches wide and 2 inches tall.

Watch the jump between sizes. Going from a 5 inch house to a 7 inch house is not 40 percent more dough. It's 88 percent more, because area scales with the square of the linear size. Going from 5 to 9 inches triples the dough. That surprise is the reason people run out halfway through the roof.

How much dough, in cups

Panel area times thickness gives you volume, and volume converts to cups at 14.44 cubic inches per cup.

The 30 percent is for the lattice between cut panels, the offcuts too small to re-roll, and the one panel that cracks. Cut-out gingerbread re-rolls better than most doughs because it isn't a laminated or leavened dough, but every re-roll picks up flour and gets a little tougher, so three re-rolls is the practical limit.

Thickness is a size decision, not a texture one. A quarter inch is the standard for walls. Go thinner at an eighth and the panels flex and snap at the seams. Go thicker at three eighths and the dough puffs unevenly in the middle, so the wall isn't flat and the house won't sit square. Roll between two quarter inch guides, not by eye, because a panel that's a quarter inch at one end and three sixteenths at the other builds a leaning house.

Sheet pan yield

Panels need a half inch margin all round the pan, because the outer edge of a sheet runs hotter and panels there brown before the middle ones set.

The last column allows for nesting: rectangles and gables don't tile perfectly, so about 75 percent of the usable area actually becomes panels.

Which means:

Bake panels of similar size together. A 2 inch chimney piece next to a 9 inch wall panel means the chimney is burnt by the time the wall is done, and an underbaked wall panel is soft, which means it bends under the roof three hours later.

The size details that decide whether it stands up

Door and window openings need a margin. Keep every cut-out at least half an inch from any panel edge on the classic house, and scale that margin with the house: 0.1 x W is the rule. A window cut too close to a corner takes the strength out of exactly the spot the seam relies on.

Door proportions that look right on the classic house: 1.5 inches tall by 0.9 inches wide, which is 43 percent of the eaves height. Windows at 1 inch square, centered between the door and the corner.

Panels grow in the oven. Cut-out gingerbread spreads about a sixteenth of an inch per edge, more if the dough was warm going in. On a 5 inch wall that's an eighth of an inch of extra width, which sounds trivial until you find your two side walls are now longer than the roof panels that have to cover them.

There are two fixes and only one of them works reliably. The first is cutting panels undersize to allow for spread, which needs you to know your own dough's spread rate before you start. The second is trimming hot: lay the paper template back on each panel the moment it comes out of the oven and cut round it with a sharp knife while the gingerbread is still soft. Two minutes later it's too firm to cut and it shatters instead. Trimming hot is what professional builds do, and it's why their seams close.

Chilling the rolled dough hard before cutting cuts the spread substantially. Panels have to dry before they carry load. Bake them, then leave them flat and uncovered overnight. A panel straight off the cooling rack still has enough moisture to flex, and a flexing wall lets the roof creep. Twelve hours of air changes it from a cookie into a building material.

How much royal icing the seams take

Royal icing is the mortar, and the amount is set by seam length, not by house area.

Total seam length on the classic house adds up like this: four vertical corners at 3.5 inches each is 14 inches, four roof-to-gable slopes at 3.2 inches each is 12.8, the ridge is 5.5, and the wall-to-base perimeter is 19. That's about 51 inches of seam.

A structural bead is roughly a quarter inch wide and a quarter inch tall, so its cross section is 0.0625 square inches. Multiply by 51 inches of seam and you get 3.2 cubic inches, which is 0.22 cups.

Structural icing is a fraction of the total. Snow, piping, icicles and glue for candy eat several times more than the seams do, and they're the part you always underestimate.

Worked example: scaling the classic house up by half

You want a house half again as big as the classic, so W goes from 5 to 7.5 inches.

Step 1. Scale every dimension by 1.5. Depth 6.75, eaves 5.25, peak 8.25, roof panels 7.75 x 5.3 inches.

Step 2. Dough scales by the square. 1.5 squared is 2.25, so 118 square inches becomes 265 square inches. In cups that's 2 x 2.25, which is 4.6 cups of dough, or 6 cups with the scrap allowance.

Step 3. Pans. 265 square inches of panels needs about 353 square inches of rolled sheet. That's two half sheet bakes, and the 8.25 inch gable panels will only fit across the 12 inch dimension, not along it, so plan the layout on paper first.

Step 4. Icing scales linearly. Seam length goes from 51 to 76 inches, so structural icing goes from 1/4 cup to about 1/3 cup.

Step 5. Thickness stays at 1/4 inch. This is the step people get wrong. Scaling thickness with the house gives you a 3/8 inch wall that bakes unevenly and tastes like a brick. Bigger houses get their strength from longer drying and better seams, not thicker panels.

Step 6. Base board. The footprint is 7.5 x 6.75 inches, so the board wants 2 inches of margin all round: 11.5 x 11 inches. Use a cake board, not gingerbread. A gingerbread base for this house would be another 126 square inches of dough, which is more than the entire classic house.

That last row is worth sitting with. Six small houses cost you roughly the same dough as one medium one, and a village reads as much more work than it is.

What size should a gingerbread house be?

How many gingerbread houses fit on one sheet pan?

One classic 5 inch house per 13x18 half sheet, with room left for a chimney and a few trees. Three mini houses fit on the same pan. A medium house needs two half sheet bakes and a large one needs two full-length bakes.

How much royal icing do I need to glue it together?

About a quarter cup for the 51 inches of seam on a classic house. That's the structural part only. Decorating, snow and candy gluing take 1 to 2 cups more, and that's the amount people run short on, not the seams.

Can I make the panels ahead?

Yes, and you should. Bake the panels, leave them flat and uncovered overnight to dry, and they get noticeably more rigid. Dry panels can sit in a sealed tin for a week or two before assembly without losing anything, since a construction gingerbread isn't trying to stay soft.
