What Is Vanilla Bean Paste?

Vanilla bean paste is a thick, syrupy blend of vanilla extract, scraped vanilla seeds, a sweetener and a small amount of thickener. It swaps into any recipe teaspoon for teaspoon with extract, and the only visible difference is the fleck of black seeds it leaves behind.

So the short answer to what is vanilla bean paste: it is extract with the seeds put back in and the liquid thickened so those seeds stay suspended instead of sinking. Nothing structural changes in your batter. You are adding a few grams of a strong-tasting syrup to a bowl that already weighs hundreds of grams.

What is vanilla bean paste made of?

There is no legal recipe for paste, which is why two jars can behave slightly differently. Most commercial pastes are built from the same five things, in roughly this order of weight.

Two things follow from that table.

The seeds are decoration. By the time a bean has been through extraction, most of the aromatic compounds have moved into the alcohol. The specks are what make a panna cotta look homemade, and they are worth paying for on that basis alone, but they are not doing the heavy lifting on taste.

The sweetener is why paste is thick. A paste that pours like syrup usually has more sugar in it. A paste that has to be dug out with a spoon usually has more gum. Neither is better, but the runny ones are easier to measure.

For the legal side, the US Food and Drug Administration does define pure vanilla extract: it must contain at least 35 percent ethyl alcohol and the extractive of at least 13.35 ounces of vanilla beans per gallon. You can read the standard in the eCFR, 21 CFR 169.175. Paste has no such standard, so the ingredient list on the back of the jar is the only reliable guide.

All four are the same plant. What separates them is what else is in the bottle and how the aroma is carried.

One caution on the 1 to 1 rule. A handful of concentrated "double strength" pastes exist, and they will say so on the front label. Those go in at half the amount. If the jar does not claim double strength, treat it as equal to extract.

Where vanilla bean paste actually earns its place

Vanilla is volatile. Heat drives off the aromatic compounds, which is why a vanilla cake tastes less vanilla than the batter did. That single fact tells you where paste is worth using and where it is not.

That is not snobbery about ingredients, it is about where you get a visible and tasteable return. Save the paste for the recipes where a person can actually tell.

The sugar and liquid it adds: a worked example

Bakers worry that paste will throw off a recipe because it contains sugar. Run the numbers and the worry disappears in almost every case.

Start with the weight of a teaspoon. Vanilla bean paste is denser than water because of the sugar, so 1 teaspoon lands at roughly 6 to 7 g depending on the brand. Call it 7 g to be safe.

Now say a paste is 40 percent sugar by weight, which is a reasonable middle figure for a jar that lists sugar second.

Nothing you can taste, and nothing that changes the texture.

Now push it to the extreme. An ice cream base is the recipe most likely to use paste generously, so try 1 tablespoon.

Five percent is real but still small. If you are running a base you have tuned carefully, pull 8 g out of the granulated sugar and you are back where you started.

The liquid is even less of an issue. A teaspoon of anything is about 5 ml. In a cake batter weighing 900 g, that is half a percent of the total. Vanilla has never been the reason a batter came out loose.

How to measure vanilla bean paste without wasting half of it

Paste clings. That is the whole problem with it, and it costs you more than any other measuring error in the jar.

A teaspoon of paste can leave 1 to 2 g behind on the spoon, which is 15 to 30 percent of what you meant to add. Three ways around it:

  1. Weigh it straight into the bowl. Put the mixing bowl on the scale, zero it, and spoon paste in until it reads 7 g per teaspoon called for. Nothing sticks to anything.
  2. Dip the spoon in the wet ingredients first. A spoon wet with milk, cream or melted butter releases paste cleanly. The same trick works for honey and molasses.
  3. Scrape with a small silicone spatula, then stir the spoon into the wet mix rather than rinsing it.

Do not measure paste over the bowl. It falls off in a lump when it decides to, and there is no rescuing an extra tablespoon of vanilla from a meringue.

How to store vanilla bean paste so it lasts

Stored properly, an opened jar of paste stays good for a year or two, and an unopened one longer. The rules are short.

Separation is not spoilage. If a dark layer settles under a lighter one, roll the jar between your palms and stir with a clean spoon. It comes back together.

Crystals are not spoilage either. Sugar coming out of solution is a temperature story, not a safety one. Stand the closed jar in a bowl of warm tap water for 10 minutes and stir.

Signs the jar is past it: a flat, papery smell instead of a sweet one, visible mold, or a fermented, boozy-sour note that is not the alcohol you expect. Alcohol and sugar together make a hostile place for microbes, so genuine spoilage is rare and almost always traces back to a contaminated spoon.

Paste that has simply gone weak with age is still usable. Use half again as much and put it into something baked, where nobody is judging the aroma closely. The same logic applies to storing the finished bakes, which our guide to how to store baked goods covers.

Reading the label: what separates a good paste from a weak one

Because paste has no legal definition, the label does all the work. Four things to check.

1. What comes first in the ingredient list. Ingredients are listed by weight. A paste that opens with vanilla extract or vanilla bean extractives is built around vanilla. One that opens with sugar, corn syrup or water is built around filler, with vanilla added to it.

2. The words "vanilla flavored" on the front. In US labeling, a product using anything other than real vanilla extractives for its aroma cannot simply be called vanilla. "Vanilla flavored" is a signal to turn the jar around and read the back.

3. Whether vanillin appears on its own. Vanillin is the single dominant aromatic compound in vanilla, and it can be made synthetically. It is not harmful and it performs perfectly well under oven heat. It just costs less to produce than a cured bean, so a jar listing added vanillin should not be priced or presented as a premium product.

4. Visible seed density. Hold the jar up to a light. A good paste looks heavily speckled all the way through, not just at the top. Since the seeds are the main reason to buy paste at all, this is a fair thing to judge on.

One thing not to judge on: thickness. A thicker paste means more gum or more sugar, not more vanilla.

Common vanilla bean paste problems and fixes

The seeds all sank to the bottom of my custard. Seeds are denser than a thin liquid. They stay suspended in something set or thickened, and they drift down in something loose. Add the paste after the custard has thickened, or chill the base to a thicker consistency before you pour it.

My frosting looks speckled and dirty rather than pretty. In a pure white frosting, black seeds can read as flecks of something else. Vanilla powder gives you aroma with a cleaner look, or use clear imitation vanilla and skip the specks. The paste seized into hard beads in my cold buttercream. Cold syrup hitting cold butter can bead up. Warm the paste for a few seconds in your hand, or stir it into a spoonful of the frosting first and then fold that back in.

My cookies do not taste of vanilla at all. They probably never did. Vanilla is mostly lost above 300°F, and a cookie bakes at 350 to 375°F. That is a heat problem, not a product problem, and it is why extract is the smarter buy for cookies. If you want vanilla in a cookie to register, add a little more salt alongside it rather than more vanilla.

The jar smells like alcohol and not much else. Fresh paste does carry an alcohol note when you first open it. It bakes and sets off. If that is all you can smell after 30 seconds of the jar being open, the paste is likely thin.

Frequently asked questions

How much vanilla bean paste equals 1 teaspoon of vanilla extract?

One teaspoon, unless the jar says double strength, in which case use half a teaspoon. The extract base in most pastes is close enough in strength to straight extract that no adjustment is needed. Nothing else in the recipe changes, since a teaspoon of anything is a fraction of a percent of a normal batter by weight.

Is vanilla bean paste better than extract?

Better in cold and pale recipes, no different in baked ones. Paste wins in ice cream, custard, buttercream and panna cotta, where you can see the seeds and the aroma is not being cooked off. In a cake baked at 350°F for 30 minutes, most of what makes paste special is gone by the time it comes out, so extract does the same job.

Can I use vanilla bean paste instead of a vanilla bean?

Yes. One whole bean is roughly 3 teaspoons of paste, working backwards from the usual rule that a third of a bean equals a teaspoon of extract. Paste is the easier trade in anything that is already thick. In a warm cream infusion, a real bean pod still gives you something extra, since the pod itself carries aroma the seeds do not.

Does vanilla bean paste need to be refrigerated?

No, and refrigeration makes it worse. Cold thickens the syrup, can crystallize the sugar, and makes the paste hard to spoon accurately. A cool dark cupboard between 60 and 75°F is the right home for it, with the cap wiped clean and screwed down tight.

Does vanilla bean paste go bad?

Rarely, because the alcohol and sugar together make a poor environment for microbes. An opened jar stays good for one to two years and simply fades after that. What does spoil a jar is water or batter carried in on a used spoon, so always use something clean and dry. Mold, a fermented sour smell, or a flat papery aroma are the signals to replace it.

Why is there sugar in vanilla bean paste?

Sugar gives the paste its body, helps hold the seeds in suspension, and acts as a preservative. It is also the reason paste is thick while extract is thin. The amount that reaches your recipe is tiny: a teaspoon of paste carries roughly 3 g of sugar, next to the 200 g in a single cup of granulated sugar in the same bowl.

Can I make vanilla bean paste at home?

You can blend scraped seeds and spent pods with extract and a simple syrup, then thicken it slightly. What you will not easily match is the suspension, since a homemade version separates within days and needs a stir every time. Keep it in the refrigerator, use it within a couple of months, and expect it to be thinner than a commercial jar.

Does vanilla bean paste work in bread dough?

It works, but it is the wrong place for it. Bread bakes long and hot, often past 200°F internal, and the aroma does not survive that. Enriched doughs such as brioche or cinnamon rolls do hold onto a little more because of the fat and sugar in them, so if you are going to use paste in bread, that is where.
