Sweetener Substitutes Baking: What Swaps for What
The short version of sweetener substitutes baking questions: swapping one dry sugar for another dry sugar is usually a straight one-for-one by volume, and swapping a dry sugar for a liquid one is not. Honey replaces granulated sugar at three quarters of a cup per cup, and you then cut the recipe's other liquid by about 3 tablespoons per cup and drop the oven 25°F. Coconut sugar goes in one for one. Everything else sits between those two cases.
The reason liquid sweeteners need three separate adjustments is that sugar is not only sweetness. Sugar tenderizes by getting in the way of gluten, holds moisture, helps cookies spread, and does most of the browning. Change the sweetener and you change all four, not just the taste.

Why liquid sweeteners need three changes and dry ones need none
A cup of granulated sugar is essentially pure sucrose crystals with almost no water in them. A cup of honey is roughly a fifth water, plus invert sugars that behave differently in heat. Dropping honey into a recipe written for granulated sugar therefore does three things at once.
It adds liquid. That is the 3 tablespoons per cup you take back out of the milk, water or juice. Skip this step and you get a batter that is looser than intended, which usually shows up as a sunken middle or a gummy layer at the bottom.
It browns faster. Invert sugars brown at lower temperatures than sucrose does, which is why honey recipes run a cooler oven. Dropping 25°F is the standard correction, and our oven temperature converter will give you the Celsius and gas equivalents of the reduced number.
It adds acid. Honey is mildly acidic and granulated sugar is not. In a recipe leavened with baking soda, that extra acid gives you more reaction and more lift, which is usually welcome. In a recipe with no baking soda at all, the tool's guidance is to add about 1/4 teaspoon of baking soda per cup of honey to make use of it.
Dry-for-dry swaps skip all three problems because the water content and the crystal behavior are close enough. That is why coconut sugar, superfine sugar and packed brown sugar all go in one for one and the only thing you notice is color, flavor and a small texture shift.
The weights, because volume lies with sugar
Cup measurements of sugar are more reliable than cup measurements of flour, but they are not equal to each other. A cup of honey weighs nearly twice what a cup of granulated sugar weighs, so a recipe that gives sweeteners by weight is not making the swap you think it is.

Those are the same figures our ingredient weights chart uses, and you can convert any of them with the grams to cups converter. The honey number is the one worth remembering, because syrup left clinging to the inside of a measuring cup is a real loss, often around 10 g per cup. Swapping in the other direction
Substitution charts are not symmetrical, and it is worth saying so plainly. Going from sugar to honey and going from honey to sugar are two different recipes being fixed, so the ratios do not invert cleanly.

Notice that honey is listed as three quarters of a cup per cup of sugar going one way, and a cup of honey comes back as one and a quarter cups of sugar plus water going the other. Those are not exact inverses of each other, and neither is wrong. Each ratio is tuned to the failure it is preventing. Going toward honey, the risk is a wet, over-browned bake, so the ratio is conservative. Going away from honey, the risk is a dry one, so the water goes back in.
The corn syrup rows deserve one extra warning. Corn syrup's real job in caramel, pecan pie and glossy frostings is stopping sugar from recrystallizing. A plain sugar syrup can and does recrystallize, so a candy made with the sugar-and-water replacement may be smooth on the day and grainy by the weekend. Honey and golden syrup are invert sugars and genuinely do that job. Maple syrup does not, so it is a baking substitute for corn syrup and not a candy one.
Brown sugar, powdered sugar and the ones you can make
Two of the most common sweetener shortages have exact answers rather than compromises.
Brown sugar is granulated sugar plus molasses. One cup of granulated sugar plus 1 tablespoon of molasses gives light brown sugar, and 2 tablespoons gives dark. Work it with a fork or a mixer until no streaks remain and it is indistinguishable from the bag. If you have maple syrup instead of molasses, 1 tablespoon of that works too, though it is slightly less moist and slightly less acidic, so a soda-leavened recipe lifts a little less. Powdered sugar is granulated sugar blended fine, with a little starch. Blend 5/8 cup of granulated sugar with 1/2 teaspoon of cornstarch on high for a full minute to get about 1 cup of powdered sugar. Let the dust settle before you open the jug. The starch stops it caking, exactly as the commercial product does. The honest limit is that a home blender never reaches a commercial mill's fineness, so buttercream made this way is very slightly gritty and royal icing will not set glass smooth. For dusting and for glazes it is fine.
What you cannot do is leave the molasses out of the brown sugar swap and call it even. Molasses brings the moisture that makes brown sugar cookies chewy, and it is mildly acidic, so it reacts with baking soda. Plain white sugar gives a flatter, crisper, paler cookie. Sugar-free and low-calorie sweeteners
These are not in our substitutions converter, and that is deliberate: the ratios depend on the brand and on whether the product is a pure extract or a bulked blend. Treat everything below as a starting point and follow the package, which is the only source that knows what is actually in the bag.

The pattern across all of them is the same. None of these caramelize the way sucrose does, so bakes come out paler and flatter, and cookies in particular stop spreading because there is no melting sugar to spread them. Allulose is the exception on browning, since it colors readily and can go too dark before the middle sets. If you use it, drop the oven 25°F the same way you would for honey.
How much sugar you can simply remove
Cutting sugar without replacing it is a legitimate option, within limits. In most cakes, muffins and quick breads you can remove up to about a quarter of the sugar and get a result that reads as slightly less sweet and slightly less tender, but still correct. That figure is a working rule of thumb rather than a measured constant, and it depends heavily on the recipe.
Past about a quarter, things start to fail in order. The crumb tightens because there is less sugar interfering with gluten. Browning fades. Keeping quality drops, because sugar was holding the water that kept the bake soft on day two. In cookies, spread collapses first and fastest. In meringue and in candy, sugar is the structure itself, and cutting it is not an option at all.
Recipes where sugar is doing a job beyond sweetness are the ones to leave alone: meringue, caramel, jam set with sugar, anything that has to hold a shape.
What is the best sugar substitute for baking a cake?
For a cake specifically, packed brown sugar or coconut sugar swapped one for one are the easiest wins, because they keep the dry-sugar structure and only change the color and the flavor. Honey at three quarters of a cup per cup makes a moister, denser cake that keeps for days, which is a genuinely different cake rather than the same one made differently. Avoid pure high-intensity sweeteners in a cake, since the batter loses the bulk that sugar was providing.
Can I use honey instead of sugar in any recipe?
No. Honey works well in quick breads, muffins, dense cakes and cookies you want soft. It works badly anywhere the result should stay pale, anywhere the honey flavor would fight the recipe, and in meringue or candy where crystal behavior is the point. It is also not vegan, so a recipe being made for that reason needs maple or agave instead.
Does maple syrup make baked goods soggy?
Only if you skip the liquid correction. Replacing 1 cup of sugar with 3/4 cup of maple syrup adds roughly 3 tablespoons of water to the recipe, and that water has to come back out of the milk or other liquid. Make the correction and the crumb is close to normal, just moister and slightly denser. Skip it and you get exactly the gummy bottom layer people describe.
Is coconut sugar healthier than white sugar?
It is still sugar, and it should be treated as sugar for any dietary purpose. What it genuinely offers a baker is a caramel flavor and a slightly lower sweetness at the same volume. It is drier and coarser than white sugar, so it dissolves less readily, which is why it works well in a muffin batter and badly in a smooth frosting.
Why did my sugar-free cookies come out puffy and pale?
Because the sweetener did not melt or caramelize. Sugar liquefies in the oven and lets a cookie spread, and it browns to give the color and the toasted flavor. Most sugar alcohols and high-intensity sweeteners do neither, so the dough sets in roughly the shape you dropped it in. Flattening the dough balls before baking helps the shape. Nothing brings back the browning except adding a little real sugar or a spoonful of molasses.
Can I swap powdered sugar for granulated sugar in a recipe?
Not one for one, and usually not at all in a batter. A cup of powdered sugar weighs 120 g against granulated sugar's 200 g, so you would be cutting the sugar by nearly half by weight, and the cornstarch in it changes the texture. Powdered sugar belongs in frostings, glazes and shortbread-style doughs that are built around it. To go the other way and make powdered sugar from granulated, use the blender method above.
Do I need to change the baking soda when I switch sweeteners?
Sometimes. Honey, molasses and brown sugar are acidic, and baking soda needs an acid to react with. Swapping an acidic sweetener out for a neutral one such as plain white sugar or corn syrup leaves the soda with nothing to work against, and the bake rises less. The fix is a teaspoon of lemon juice per cup, which is exactly what the converter suggests for the molasses to maple swap. Going the other way, adding acid where there was none, is where the extra 1/4 teaspoon of soda per cup of honey comes from.
