Fat percentage is the whole story.
Whipped cream works because milk fat globules, chilled below about 50°F, partially crystallize. When you beat air into the cream, those semi-solid fat crystals collide, link up, and build a scaffold around the air bubbles. Below roughly 30% fat there simply aren't enough globules in the liquid to reach each other and form that network. The foam collapses as fast as you make it.
That's why every article listing milk plus melted butter as a whipped cream substitute is wrong. That mixture does land somewhere near 20% fat, but it fails twice. The fat is too low, and melted butter is no longer in globule form anyway. It's free fat that will separate out and leave you with greasy specks in cold milk.

A note on the top row, because it's the one everybody uses. 3/4 cup milk plus 1/4 cup melted butter is a genuinely good substitute for cooking and baking, and it's what you should reach for nine times out of ten. Two takeaways. First, "heavy cream" and "heavy whipping cream" are the same product with two labels, so stop hunting for a difference. Second, if a British recipe calls for double cream at 48% and you use US heavy cream at 36%, expect a slightly looser result. Whipped topping: your only real options
If your recipe ends with soft peaks, you have three paths.
Coconut cream. Buy full-fat canned coconut milk or, better, canned coconut cream. Chill the can upright and undisturbed for at least 12 hours, ideally 24. Open it without shaking, scoop the thick white layer off the top, and leave the clear water behind for a smoothie. Whip the solid layer cold with 2 tablespoons of powdered sugar per cup and a splash of vanilla. It whips in 2 to 3 minutes and holds for hours in the fridge. It tastes like coconut, which is either perfect or a dealbreaker depending on what it's going on. Brands vary a lot, so if a can refuses to separate, it had emulsifiers in it. Try a different brand.
Chilled evaporated milk. This is the old wartime trick and it half works. Chill the unopened can for 12 hours, pour into a chilled metal bowl, and whip with 1 teaspoon of lemon juice per cup. It roughly triples in volume, tastes faintly of cooked milk, and starts weeping within about 20 to 30 minutes. Use it for a pie you're serving immediately, not for piping.
A store-bought whipping alternative. Dairy-free whipping bases and aerosol toppings are built with stabilizers to do exactly this job. They hold shape longer than real cream and they're sweeter. If you're piping rosettes on something that has to sit out, this is the practical answer.

Ganache: where fat ratio really matters
Ganache is an emulsion of chocolate fat and dairy, and emulsions break when the ratio of fat to water shifts. Heavy cream is about 36% fat and 60% water. Half-and-half is about 12% fat and 85% water. Swap one for the other straight across and you've added a lot of extra water to a system that was balanced, which is exactly how ganache goes grainy and greasy. Standard ratios by weight, for reference:
- Dark chocolate: 1 part chocolate to 1 part heavy cream (a soft, spreadable ganache) or 2:1 for truffles

If you only have half-and-half: cut the liquid to about 3/4 of what the recipe calls for and add 1 tablespoon of butter per original cup. So a 1:1 dark ganache with 8 oz chocolate and 1 cup cream becomes 8 oz chocolate, 3/4 cup half-and-half, and 1 tablespoon butter. Sauces and soups: the curdling problem
The reason heavy cream can boil in a tomato sauce without breaking, and milk can't, is fat coverage. Milk protein (casein) clumps together when it's heated hard or hit with acid. In heavy cream, there's so much fat coating those proteins that they can't easily find each other. In half-and-half or milk, they find each other immediately and you get a grainy, separated sauce.
Three things trigger curdling: high heat, acid (tomato, wine, lemon, vinegar), and salt concentration in a reduction.
How to keep a lower-fat substitute from splitting:
- Temper it. Ladle a little of the hot liquid into the cold dairy and whisk, then a little more, then pour the warmed mixture back into the pot. Never dump cold half-and-half into a simmering pan.
- Add it off the heat, or at least turn the burner to low. Once dairy is in, do not let the pot boil.
- Add a starch. Whisk 1 teaspoon of cornstarch or flour per cup of substitute into the cold dairy before it goes in. Starch physically gets between the proteins and is the single most effective insurance policy here.
- Add acid last. Stir in lemon juice or wine at the very end, off heat, right before serving.

Greek yogurt deserves its own warning. It's excellent in baking and in cold sauces, and it splits almost instantly at a boil. Use it in muffin batter and in tzatziki, not in a simmering soup.
Scones, biscuits, and other baked goods
Baking is the forgiving end of this. The cream is there for fat and liquid, the batter is full of flour and starch that stabilize everything, and nothing gets held at a boil.
- Scones and biscuits: whole milk plus melted butter at 3/4 cup to 1/4 cup works perfectly. Keep everything cold and cut the butter in as the recipe directs rather than melting it if the recipe was already relying on cold fat for flakiness. - Ice cream: you need the fat, there's no way around it. Half-and-half alone gives you an icy, hard result. Coconut cream is the best substitute and makes genuinely good ice cream.
- Coffee: half-and-half, evaporated milk, or oat milk barista blends. This is the one use where nobody needs 36%.
Making half-and-half, and dealing with fractions of a cup
To make 1 cup of half-and-half: 1/2 cup whole milk plus 1/2 cup heavy cream. That's the actual composition, and it lands right around 20% fat, which is on the rich side of commercial half-and-half but perfect for cooking.
A leaner alternative for half-and-half cream: 1 cup whole milk plus 1 1/2 teaspoons melted butter. Close enough for coffee and pan sauces.

Worked example 1: a ganache that has to set
The recipe: 8 oz (227 g) dark chocolate, 1 cup (240 ml) heavy cream, for a truffle filling that needs to hold its shape at room temperature.
What the cream is doing: supplying fat to the emulsion and controlling how firm the set is. This is a fat-and-liquid job, not a whipping job, but the fat percentage is load-bearing.
- Half-and-half: works with adjustment. Use 3/4 cup half-and-half plus 1 tablespoon butter. The result sets a little softer, so chill it 30 minutes longer before scooping.
- Whole milk plus melted butter: works, and it's actually closer than half-and-half alone because you've restored the fat. Use the full 3/4 cup milk plus 1/4 cup butter.
