Can You Use Heavy Cream Instead of Milk?
Yes, and the fix is water. For every 1 cup of milk a recipe asks for, use 1/2 cup heavy cream plus 1/2 cup water, stirred together. That gets you close on liquid volume, keeps some of the dairy flavor, and stops the batter turning greasy.
Pouring cream in straight at 1:1 also "works" in the sense that it bakes, but it is a much bigger change than people expect. Heavy cream is roughly 36% fat. Whole milk is roughly 3.5%. Swapping one cup for the other adds about as much fat as stirring in seven extra tablespoons of butter, which is enough to flatten a cake, slacken a dough and make cookies spread.
So can you use heavy cream instead of milk? Almost always yes, as long as you thin it and, in a rich recipe, take a little fat back out somewhere else.

Measure the cream and the water separately, then combine. Do not try to eyeball it in the same cup, because cream clings to the sides and you will end up short on liquid.

Half and half is the same idea, already done for you: it is about 12% fat, roughly halfway between milk and cream, so 1 cup of half and half plus 2 tablespoons of water also stands in for 1 cup of milk with almost no fuss.
Can you use heavy cream instead of milk without diluting it?
Sometimes, and the deciding question is whether the recipe already carries a lot of fat.
If the recipe is lean, meaning the milk is one of the few sources of moisture and there is not much butter or oil, straight cream is a real change and you should thin it. Think bread dough, scones, popovers, crepes, most yeast doughs.
If the recipe is already rich, the extra fat mostly disappears into what is there. Think custards, bread pudding, ice cream base, ganache, mashed potatoes, creamy soups. Straight cream in those is not an error, it is an upgrade, and plenty of recipes list both as options.

The fat math, worked out
This is the part that explains every problem people run into, so it is worth doing once with real numbers.
Our ingredient weight chart puts 1 cup of whole milk at 240 g and 1 cup of heavy cream at 238 g. They weigh almost the same. What is inside them is not the same at all.
- 1 cup of whole milk at about 3.5% fat carries roughly 8 g of fat.
- 1 cup of heavy cream at about 36% fat carries roughly 86 g of fat.
- The difference is about 78 g of fat.
Now convert that into something you can picture. Butter weighs 227 g per cup, so 1 tablespoon is about 14 g, and butter is about 80% fat, so a tablespoon carries roughly 11 g of fat.
78 divided by 11 is about 7. Swapping 1 cup of cream for 1 cup of milk is like adding seven extra tablespoons of butter to the recipe and taking out most of the water.
That last half matters as much as the first. Milk is about 88% water. Heavy cream is closer to 58%. So a straight swap does not just add fat, it also removes about a third of the liquid the recipe was counting on to hydrate the flour. In a bread dough that reads as a stiff, sluggish dough. In a cake it reads as a batter that looks thick and bakes tight.
Halving the cream and topping up with water fixes both problems at once: the liquid comes back to full volume, and the fat drops to roughly what three and a half tablespoons of butter would add, which most batters absorb without complaint.
If you insist on straight cream, remove fat elsewhere
For every cup of milk you replace with an undiluted cup of heavy cream, take 2 to 3 tablespoons of butter or oil out of the recipe and add 2 tablespoons of water. That is not a perfect trade, since butter and cream behave differently in a batter, but it keeps the total fat somewhere near where the recipe intended. Worked example: a 2 cup flour cake
A plain butter cake calls for 2 cups of flour, 1 cup of granulated sugar, 1/2 cup of butter, 2 eggs and 1 cup of whole milk. You have cream and no milk.
Option A, the recommended one. Use 1/2 cup heavy cream and 1/2 cup water. Everything else stays the same. Total added fat is about 43 g, which is roughly the fat in 4 tablespoons of butter, so the cake is a little richer than written. Bake as usual and start checking 5 minutes early, because the extra fat browns the crust faster.
Option B, straight cream. Use 1 cup of heavy cream, then cut the butter from 1/2 cup down to 6 tablespoons and add 2 tablespoons of water. Now the fat total lands near the original and the liquid is close. The crumb will be softer and finer than the original, and the cake will keep better for a day or two, because fat slows staling.
Option C, nothing changed. Use 1 cup of heavy cream and change nothing else. The batter goes thick, the crumb comes out dense and slightly greasy, the top may sink in the middle, and the cake tastes rich but heavy. It is edible. It is not the cake in the picture.

The 30% line is the one that matters most. Nothing under about 30% fat will whip, which is why diluted cream is fine in a batter and useless as a topping. Where the swap goes wrong
Yeast dough. Fat coats gluten strands and slows both hydration and rise. Cream in place of milk in a bread dough gives a dough that feels lovely and rises poorly. Dilute it, and expect a slightly longer proof anyway.
Anything where the milk was for browning. Milk browns because of its sugars and proteins, not its fat. Diluting cream with water dilutes those too, so a crust or a pancake made this way comes out a shade paler. A brush of milk or egg wash on top fixes the appearance if it matters.
Recipes with acid. Buttermilk pancakes, soda bread, red velvet cake. Those recipes need acid to react with baking soda, and neither milk nor cream provides it. Swapping in cream does not solve that problem and does not create it. If the recipe wanted buttermilk, make a buttermilk substitute instead, which does work with cream thinned to milk consistency plus a tablespoon of lemon juice.
Cooking it hard. Cream splits under high heat and long boiling more readily than you would like, especially with acid in the pan. Stir it in near the end of a sauce rather than at the start.
Curdling in coffee or hot liquid. Diluted cream is more fragile than either milk or full cream. Warm it before it hits anything boiling.
Storage note
Once you thin cream with water, treat it as milk, not as cream. It has lost the fat that helps cream keep, and it will sour on roughly the same schedule as fresh milk. Mix what you need, use it that day, and keep the rest of the carton as cream.
Frozen cream is a different animal. It thaws grainy and separated, which is fine in a batter or a sauce where it gets stirred and heated, and hopeless for whipping. If you know you will only ever bake with it, freezing cream in half cup portions is a sensible way to stop wasting the end of a carton.

How much water do I add to heavy cream to make milk?
Equal parts. Half a cup of heavy cream plus half a cup of water gives you 1 cup of liquid that behaves like a rich milk in almost any batter. If the recipe is very lean, such as a bread dough, use 1/3 cup cream to 2/3 cup water instead.
Can I use heavy cream instead of milk in a cake mix?
Yes, and diluted is better. A boxed mix is already balanced for a specific fat level, so pouring in straight cream tends to give a dense cake with a sunken middle. Use half cream and half water in place of the milk or water called for, and check the cake 5 minutes early.
Will heavy cream instead of milk make cookies spread?

Is heavy whipping cream the same as heavy cream for this?
Close enough. Heavy cream is 36% fat or higher and heavy whipping cream is usually a touch lower, right around 36%, and the two are used interchangeably in the US. Both dilute the same way. Plain "whipping cream" at about 30% is leaner, so use a little less water with it.
Can I use heavy cream instead of milk in mac and cheese or a savory sauce?
Yes, straight, no dilution needed. Cream sauces are the one place where the extra fat is the entire point: it makes the sauce cling and stops it splitting as readily as milk does. Season a touch more assertively, because fat mutes salt and sharpness.
What about evaporated milk, is that closer to cream or milk?

Can I whip cream that I have already thinned with water?
No. Whipping needs roughly 30% fat to hold air, and half cream with half water lands near 18%, so it will foam a little and then collapse. Whip the cream first if you need whipped cream, and dilute only the portion going into the batter.
