Dutch Process vs Natural Cocoa: Which One Your Recipe Needs
Natural cocoa is acidic, so it reacts with baking soda and creates lift. Dutch process cocoa has been treated with alkali, so it's neutral and gives baking soda nothing to react with. Swap one for the other without changing the leavening and you get a flat, dense bake that tastes either bitter and soapy or sharp and metallic.
The rule is short: natural cocoa goes with baking soda, dutch process goes with baking powder.
If your recipe has no chemical leavening at all, like most brownies, frostings, and puddings, you can use either one freely. Only the color and flavor change.

What alkalizing actually does
Cocoa beans are naturally acidic, sitting around pH 5.0 to 5.5, which is roughly the acidity of black coffee. That acidity comes from fermentation of the beans and it carries the fruity, sharp, slightly sour notes people describe as bright chocolate.
In the 1820s a Dutch chemist named Coenraad Van Houten started washing cocoa with an alkaline solution, usually potassium carbonate. The alkali neutralizes the acid, pushes the pH up to somewhere between 6.8 and 8.0, darkens the color, and mellows the flavor. That process is still called dutching.
Once the acid is gone, the cocoa can't do the job baking soda needs. Baking soda is pure sodium bicarbonate and it only releases carbon dioxide when an acid attacks it. In a recipe using natural cocoa, that cocoa is often the only acid in the bowl. Replace it with dutch cocoa and the soda just sits there, unreacted, tasting soapy and metallic while the cake fails to rise.

Cocoa is one of the worst ingredients to measure by volume. It compacts in the bag, so a scooped cup can run 15 to 20% heavy, and cocoa is bitter and drying enough that the extra shows immediately.
Using dutch process cocoa when the recipe calls for natural
The recipe's baking soda has lost its acid partner. You have two ways to fix it, and one of them fits most recipes better.
Option A: replace the soda with baking powder.
Baking powder already contains its own acid, so it works regardless of the cocoa's pH. Baking soda is about four times as powerful, so:
For every 1/2 teaspoon of baking soda, remove it and add 2 teaspoons of baking powder.
There's a ceiling on this. More than about 1 to 1 1/4 teaspoons of baking powder per cup of flour tastes metallic. If the math puts you over that, use Option B instead.
Option B: keep the soda and add back an acid.
This preserves the soda's other jobs, including browning and spread, which matters in cookies. For every 1/2 teaspoon of baking soda in the recipe, add one of these:

Cream of tartar is the cleanest choice because it adds no liquid, no flavor, and no color.
Worked example, natural to dutch
A chocolate layer cake: 2 cups (250 g) all-purpose flour, 3/4 cup (64 g) natural cocoa, 1/2 teaspoon baking soda, 1 cup whole milk, no other acidic ingredient.
You want to use dutch cocoa.
Option A math: remove the 1/2 teaspoon of soda, add 2 teaspoons of baking powder. Check the ceiling: 2 cups of flour allows up to 2 1/2 teaspoons of powder, so 2 teaspoons is comfortably inside. This works.
Option B math: keep the 1/2 teaspoon of soda, add 1 teaspoon of cream of tartar. Also fine, and it holds the crumb and browning closer to the original.
Now change one number. If that cake had called for 1 1/2 teaspoons of baking soda, Option A would need 6 teaspoons of baking powder against a 2 1/2 teaspoon ceiling. That's off the chart, and you'd taste it. In that case Option B is the only sensible route: keep the soda and add 3 teaspoons of cream of tartar.
Using natural cocoa when the recipe calls for dutch process
The reverse direction is gentler, because the recipe's baking powder still works fine. What you're adding is extra acidity, which lightens the color and sharpens the flavor. The classic fix neutralizes some of it:
For every 3 tablespoons (16 g) of natural cocoa, add 1/8 teaspoon of baking soda and remove 1/2 teaspoon of the baking powder.
Two guardrails. Never remove more baking powder than the recipe actually contains, and keep total baking soda at or under about 1/4 teaspoon per cup of flour, since unreacted soda tastes soapy.
Worked example, dutch to natural
A chocolate cake: 2 cups (250 g) flour, 3/4 cup (64 g) dutch cocoa, 2 teaspoons baking powder.
You only have natural cocoa. Do the math on the cocoa: 64 g is 12 tablespoons, which is four lots of 3 tablespoons.
- Baking soda to add: 4 x 1/8 tsp = 1/2 teaspoon
- Baking powder to remove: 4 x 1/2 tsp = 2 teaspoons, which is all of it
So the revised recipe is 3/4 cup natural cocoa, 1/2 teaspoon baking soda, no baking powder.
Check the soda ceiling: 1/2 teaspoon across 2 cups of flour is 1/4 teaspoon per cup, right at the limit. Good.
Notice what just happened. Starting from dutch cocoa plus baking powder, the arithmetic landed exactly on natural cocoa plus baking soda. That's the pairing rule falling out of the numbers, which is a decent sign the rule is real and not just tradition.

When the recipe has both soda and powder
Plenty of chocolate recipes list both. Before you strip out the soda, check what else is in the bowl.
If the recipe also contains buttermilk, sour cream, yogurt, molasses, brown sugar, honey, or coffee, the cocoa wasn't the only acid. The soda has other work to do, and removing it will leave those acids unneutralized and the bake sour and pale.
The safe approach:
- List every acidic ingredient besides the cocoa.
- If there's at least one substantial acid, leave the soda alone and just swap the cocoa. Expect a small color and flavor shift, nothing more.
- If the cocoa was the only acid, apply the adjustments above to the soda and leave the powder as written.
When it doesn't matter at all
Any recipe with no chemical leavening lets you use either cocoa on flavor and color alone:
- Fudgy brownies leavened only by eggs
- Buttercream, ganache, and glazes
- Chocolate pudding, custard, and ice cream
- Hot cocoa and chocolate sauce
- Flourless chocolate cake
- No-bake cookies and truffles
- Chocolate shortbread and most crusts
In these, dutch gives you a darker, rounder, more grown-up chocolate flavor. Natural gives you a brighter, sharper, fruitier one. Pick by taste.
How to tell which cocoa you have
Boxes are frustratingly vague, especially store brands. Work down this list.
1. Read the ingredient list. This is the reliable answer. Alkali-processed cacao has to be identified on the label under FDA standards of identity for cacao products, so look for any of these:
- "Cocoa processed with alkali"
- "Alkalized cocoa" or "European style"
- Potassium carbonate
- Sodium carbonate or potassium hydroxide
If the only ingredient is "cocoa" with no qualifier, it's almost certainly natural.
2. Look at the color. A rough tell, not proof. Natural cocoa is a lighter reddish brown, close to cinnamon in tone. Dutch runs from dark chocolate brown to mahogany to near black. If it looks noticeably darker than a Hershey's brown box, it's probably dutched.
3. Do the fizz test. Put 1/2 teaspoon of cocoa in a cup with 1/4 teaspoon of baking soda, then pour on a tablespoon of boiling water and watch.
- Visible fizzing and foaming means the cocoa is acidic, so it's natural.
- Little or no reaction means it's dutched.
The fizz direction is trustworthy. A weak reaction is less conclusive, since lightly dutched cocoa sits close to neutral and can bubble faintly.
4. Use origin as a fallback guess. American cocoa without a label is usually natural. European cocoa without a label is usually dutched. Don't bet a birthday cake on this one.
Useful brand shortcuts: Hershey's in the brown box is natural. Hershey's Special Dark is a blend of natural and dutched, which puts it in an awkward middle. Ghirardelli unsweetened is natural. Droste, Valrhona, Cacao Barry Extra Brute, and Guittard Cocoa Rouge are dutched.
Black cocoa, the extreme case
Black cocoa is dutch process taken as far as it goes, alkalized to a pH around 8. It's the flavor and color behind Oreo cookies. It looks like charcoal and it dyes everything it touches.
Three things make it different from ordinary dutch cocoa:
It has no acidity whatsoever. Baking soda gets absolutely nothing from it. Any recipe you build around black cocoa needs baking powder or another acid source.
It's low in fat. Standard cocoa is around 22 to 24% cocoa butter. Black cocoa is often 10 to 12%. Less fat means a drier, more crumbly result, so recipes using much of it usually need extra butter or liquid.
On its own it barely tastes like chocolate. All the fruity, acidic notes were alkalized away. What's left is dark, dry, and faintly ashy. Striking as an accent, disappointing as the whole show.
That's why black cocoa wants a blend. Sensible starting points:

The first row is the common one, and the soapy note is the giveaway. That's unreacted sodium bicarbonate on your tongue, and no amount of frosting hides it.
