    Read me Why flour has two different β€œright” answers

    Flour is the one ingredient where honest sources disagree, and it is not because anyone is wrong. It is because a cup is a container, not a quantity. How you fill it changes what goes in it.

    Spoon & level: spoon flour loosely into the cup, then sweep the excess off with a straight edge. This gives roughly 125 g per cup, the figure most cookbooks and this converter use by default.

    Scoop & sweep: dip the cup into the bag and sweep. The flour compacts on the way in, and the same cup now holds roughly 145 g, sometimes 150 g if the bag is settled.

    That is a 16% difference in the main structural ingredient of your bake. In a two-cup cake recipe it is an extra 40 g of flour, enough to turn tender into dry. Nothing about your technique has to change for it to happen; it happens in the cup.

    This is the whole argument for weighing. 125 g is 125 g on any scale, in any kitchen, on any day, whether the bag is fresh or settled and whether you are careful or in a hurry.     Ounces here are weight ounces, not fluid ounces. One US cup is always 8 fluid ounces of volume, but it weighs 8 ounces only for water-like liquids.

    Questions bakers actually ask

    Why do a cup of flour and a cup of sugar weigh different amounts?

    Because a cup measures volume: the space something takes up, and weight depends on how much material is packed into that space. Flour is a fluffy powder full of trapped air, so a cup of it holds only about 125 g. Granulated sugar is made of hard, dense crystals that sit closely together, so the same cup holds about 200 g. Honey has no air in it at all and is heavier than water, so a cup weighs about 340 g.

    That is nearly a threefold spread between the lightest and heaviest common baking ingredients. It is why a generic converter that turns grams into cups without asking what you are measuring will be wrong most of the time, and badly wrong on syrups and butter.

    Should I scoop the flour or spoon it into the cup?

    Spoon it in, then level it off. Fluff the flour in the bag with a fork, spoon it loosely into the cup until it heaps over, then sweep the top flat with the back of a knife. Do not tap, shake or press the cup, every one of those settles the flour and adds weight.

    Scooping the cup directly into the bag compresses the flour as it goes in and typically gives you 145 g instead of 125 g. If a recipe does not say which method it used, spoon-and-level is the safer assumption for American recipes, because it is what most recipe developers and test kitchens use.

    Is a US cup the same as a metric cup?

    No, and the difference is big enough to matter. A US customary cup is 236.6 ml. A metric cup, used in Australia, New Zealand and much of Europe, is 250 ml: about 5.6% larger. The old imperial cup used in some British recipes is 284 ml, a full 20% larger than the US cup.

    This converter uses US cups, because that is what American recipes and the great majority of online recipes mean by β€œcup”. If your recipe is Australian, multiply the cup figures here by 1.057, or better, use the gram figures and ignore cups entirely, which is exactly why weights exist.

    Is it really better to weigh than to measure by cups?

    Yes, for anything dry or sticky, and the reason is repeatability rather than snobbery. A gram is a fixed quantity. A cup is a container whose contents change with how you fill it, how settled the bag is, how humid the room is and whose hands are doing the filling. Professional bakeries work entirely in weight for that reason.

    Weighing is also faster and cleaner in practice. You put the bowl on the scale, press tare, and add ingredients one after another into the same bowl, no nested cups, no packing brown sugar into a measure, no scraping peanut butter out of one. A basic digital scale costs less than a set of good measuring cups.

    Volume is still fine for water-like liquids and for small amounts of leaveners and salt, where a teaspoon is quicker and precise enough.

    How do I convert a whole recipe from cups to weights?

    Go through the ingredient list one line at a time and convert each one with its own density, that is the part people get wrong, by finding a single conversion factor and applying it to everything. Use this converter for each ingredient, or the full ingredient weight chart if you would rather work from a list.

    Two practical tips. First, leave the small quantities alone: teaspoons of baking powder, salt, vanilla and spices are fine as they are, and weighing 1 g of anything on a kitchen scale is unreliable anyway. Second, write the gram figures directly onto your copy of the recipe the first time you convert it, then bake it once and note whether the result matched what you expected, a recipe that used scoop-and-sweep flour will need the higher figure, and your own notes are the only way to know.
